Decided to order this from my local restaurant, one of the nicest dishes I’ve ever tried in my life. The gentleman would boil noodles chicken fish cake and bean sprouts. The sauce was always placed in a seperate small container, I guess you could poor the whole sauce in but I didn’t know how to eat it. I would dip it in the sauce... so yummy. The guy is t there anymore and the dish was never the same without him. Bless him wherever he is, nicest person. The sauce was runnier though kind of had a different texture. I apologise if I offend anyone I can only describe it like jelly or mucus. I love soups like that. He also made the chicken and corn soup that way. Great video yours was the closest to what he made just thicker.

I've watched the Singapore TV show "Under one roof" and only today did I get the spelling of Yusuf 's dish "Mee Rebus" and here I am watching the cooking video. If I ever go to Singapore this will be the first dish I try 😋. Didn't even think it would be a dish with sweet potatoes
It's always so entertaining to watch a well known dish cooked from scratch. Proper Mee rebus preparation does require effort and time . The ones in food courts in singapore are mostly pretty bland as compared to some good hawker center stalls or better still home made ones. Who agrees with me?☺

I had tasted a version where huge chunks of tomato was added to the sauce. The yellow noodles and bean sprouts were blanched in a rattan wicker woven ladle. All these are from my childhood days of school tuckshop and Lunar New Year.

The tiny shrimp (shown at 6:00 minute) is called KRILL. This is one of the things whales eat. While swimming in the open sea, sometimes they jump upon your open palm and you can eat it raw... salty sweetish taste. . Mmmm yummy, even when raw. It is delicious. I love it. My first experience of this was in coastal water in Malaysia. Not always available, you have to be lucky they are passing by with the current.
cheapest n best mee rubus is in johor @ 1.60sen 2 rm 5.00 with crab n big prawn... i don't need 2 know wat's inside but is it cheap n delicious !!!!!!... the secret is in the gravy... fried garlic n onions

Hi Marie. Thanks so much. We got it from those stores that sell dried foodstuff. The small shrimps look slightly different from the usual dried shrimps. It’s skinny - not meaty at all. If you can’t find it, please omit it. No problem. Happy cooking.

Hi Mel. You can use yellow or orange sweet potatoes. Their colour has no effect on this dish. As for microshrimps, you can also add them to Taiwanese Braised Pork rice recipe or yam cake recipe. We haven’t made a mee siam recipe yet. Hope to make one soon 🤓🤓
Yes this seems truly time consuming definitely compared to most of the other recipes but mee rebus is always one of my fav so I will go to my fav hawker or restaurant to get my fix
Hi Das. Our pressure cooker is a brandless one - Roland got it rather cheap from a Groupon deal. Works well for us. Have been serving us for years. Sorry we dunno what else to share because there’s no brand or link I can point you to.

Have you tried 'frying' your shallots in the microwave oven before? I always do it like that because it doesn't make the kitchen oily and the smell doesn't permeate the house. Just do it in increments of time until it's pale as like the wok, it will continue cooking.
@@spicenpans I've not tried in a convection oven because the results using a microwave oven are excellent. But I have seen recipes where the instruction says to mix the sliced shallots with a little oil and using the grill on the oven to cook them and turning occasionally.

The dried shrimp that u fry without oil is called "grago" from the Malacca Portuguese patios. It's the same stuff used to make belacan in Malacca, Penang n Indonesia too. Colloquially, the Malacca Portuguese r also called "Grago" without racial slur

My family tried this very recipe. Result was OK, we added peanuts into the sauce, a bit too much. Will need to cook again to perfect it. We love the chinese stall at LORONG AH SOO hawker centre. 😋😋😋😋😋😋

In Malaysia, our Mee Rebus usually consists our big chunks of stewed beef & thick slices of chuchor rodei (shrimp & potato fritters)...yummmm!

It was sold in mslaysia by indians from kerala. Later spread all over like roti chanai, chapati etc.
