You can roast them in a toaster oven (on a pan, they weep).

I don't think so, because beets contain a lot of oxal acid which decreases the bioavailabilty of nutrients and high amounts of oxal acid can cause kidney stones.
I love this so I would like to say that could be improved in your zesting technique. I used to zest my lemons and oranges that way but learned the proper way to do it. You get way more zest. This looks amazing though.

I made this for myself as an appetizer and it was AMAZING! SO GOOD! The lemon zest and olive oil really brings out the beetroots flavor.
