    Derek this post is a keeper. My only quibble living in Canada is keep pantry items including frozen foods, as necessary. I live near an Asian market so very lucky indeed. My family always cooked so a grateful recipient. Am dealing with cancer at the moment; Kiwi the wonder dog gets me out every day I love her more than words can say. .... I do have an Instant pot to make beans, vegan yoghurt etc. and now trying to make kimchi at home, wish me luck, you are a very good man indeed.

    Something Derek didn’t mention in his video, probably because he's quite modest, is that the book he wrote is the most organized and comprehensive guide on vegan cooking I've ever come across. It includes an extensive section on all the utensils Derek uses, as well as separate sections for essential cooking elements like sauces and bases. I received my copy as a birthday gift five years ago, and after going through several other vegan cookbooks since then, I must say it's the best and most complete vegan cookbook out there. Do yourself a favor and get it!

      I wish we had good mushrooms here in Mexico. We have creminis, portabellos and insipid looking flavorless oyster mushrooms. I would kill for some King Oyster mushrooms. I do have a pretty good pantry though and it’s taken me months to find the things I need to stay vegan. I make my own vegan butter (none available here), soy unsweetened yogurt (none available), vegan pepperoni and bacon. We do get Beyond things, extremely expensive though.

    I grate leftover cucumbers I can't finish in time and freeze them so I can have fresh tzatziki any time so long as I have yogurt on hand.
    For mushrooms I can't finish in time, I let some of them airdry to make into a powder and the rest I freeze for meals that don't require the mushroom to have texture like soups or risotto

    Because of you I went out and bought the exact same twelve inch tongs. The spring is a little tight yet, but I assume over time I will be knocking out the tunes oncce I break them in. I love all these tips. They've taken my skill and efficiency to the next level. Have a great weekend Cuz!

    I like your idea of keeping everything in plain sight, so that you don’t forget what you have to use.

    Thank you Derek! Nice to see the surrounding area where you live and the market where you shop. I'm curious if you use the juicing pulp in any recipes? Do you ever use a dehydrator for anything? My fridge door is so full of condiments that I might use a few times before they unfortunately go bad. A homemade condiment video would be so cool so viewers can make small batch recipes instead of the jars that are too big to use in the short expiration window once they're open. Thanks for everything you're doing to help make us all better home cooks. And thank you for sharing sweet Frankie with all of us. She's very special.❤

    I love fruit! I love vegies! Fruit is so expensive that I can't buy it, every so often I buy ONE apple or one pear and so on. Thank goodness frozen vegies are inexpensive. Peppers are anywhere from $1.39 to $2.00 EACH! These are a luxury. Today I made a broccoli and tofu stew with greek seasoning. In the winter, I put in potatoes and carrots. My best to you and Frankie.

    Thank you. My camp kitchen is also a replication of my home stuff. I also bought a Kazan recently for camping, an Afghan pressure cooker for using over a fire, total game changer for cooking dried beans at camp. Love and hugs as always to Frankie x

    This was great! I'm always careful about buying unnecessary kitchen "gadgets" (more to clean) so I was pleased to see I pretty much duplicate the basic equipment you have and I tend to only use the same few cooking utensils/pots in my vegan kitchen. Wish list: a better quality chef's knife, wood cutting board and stand mixer (I do like baking and making bread). Also, our fridge and pantry items are pretty much identical. For me, that's reassuring as I work towards being a better vegan cook. Your videos are certainly helping with that process. Hello Frankie *smooch* 💚

    In the process of transitioning back to plant based eating from a mostly vegetarian diet to support my mental and physical health during early menopause. From past experience during nutrition school, I never had more energy than when I cut out animal foods. It's time to be kind to my body again. Love your content and approach.

    I found your channel maybe a couple weeks ago and it's been really helpful and calming for me. I appreciate your great recipes and personality, and bits of wisdom and vegan encouragement.
    I'm on a budget but you've shown me great ways to work with tofu and to think creatively with plants to make something nourishing and enjoyable. I'll be moving away from home soon and I think this video will come in handy, setting up my kitchen :)

And I was actually doing really good from January to current and I fell back into this little rabbit hole so this little video has been a little pick me up and a little inspiration to get me back on track. Thank you because I always do try to do the 80/20 method myself but I just kind Of fell off the wagon there for a little bit. So here I go back on.     Love ya'll. I loved this video. I would appreciate a slower version. Perhaps a pantry tour of what's in all those bulk spice containers. A full video on using your mortar and pestle with spices, etc. A knife sharpening video would be great. I have more ideas, but this is enough for now.

    Derek, how did you find the energy or strength to cook at home after coming back from your kitchens? I work long shifts at my vegan bakery and struggle to stand when I'm home. Cooking for myself is really a challenge.

    I would love a more detailed video on how you clean your cutting boards. I have a big and a small board and I tend to use the smaller one more often simply because I can rinse it under water although I would like to use the bigger one more.

I try the same approach to just have the healthy stuff in but I have two adult sons who dont like veg despite my efforts to encourage them and they still buy junk food.     What I loved about this video was that it was really... not a shocker. I think people think you have to have all these special ingredients, equipment, etc. to eat vegan and it's really quite straightforward: know your flavour-layering techniques. Always look forward to your videos! P.S. Just bought my kid a copy of your book. She's been trying to eat more plant-based and is super-creative in the kitchen. Thought she'd appreciate your style. : )

    Yep, that's what I try to do, surround myself with healthy food and do my best not to bring the junk food in. Of course I cave when I'm out and about but my goal is to do my best at home. Hey, have you ever thought of playing wooden spoons? You'd probably do well. I used to perform bluegrass and folk music locally and sometimes people would play the spoons. It was really cool watching them! Anyway, enjoy your weekend!!

    I read once that dogs think we can understand their needs with only eye to eye communication. I thought "wow, what an amazing relationship. What an honor to have that kind of understanding" yet not everyone gets it. But you do Derek, and so does my animal loving vegan family! Animals are my favorite people, but dogs are my best friends! And your honesty is so refreshing. I would say I'm shocked you are single... except I have 2 grown sons who are amazing humans (with dogs and cats) who are single, for good reasons. ❤

    You inspired me to finally make the juices I promised myself! Sicilian from Kris Carr's Crazy Juice, my version of a kale tonic, and a beet, carrot, apple, lemon & ginger combo...so good!

    Thanks for covering this. It’s so easy to get overwhelmed by all of the equipment “experts” say is needed. I like keeping it simple and practical. And, of course, cast-iron is a big part of that and has been most of my life. Cheers.
