  • Nebeyaki Udon with lots toppings is one of the most popular udon recipes in Japan. This is a perfect noodle dish for those cold days.
    How to Make Nabeyaki Udon Noodles

    1 Bag of Frozen Udon Noodles
    300ml Water (1.27 u.s. cup)
    2/3 tsp Granulated Dashi
    25ml Soy Sauce (1 2/3 tbsp)
    25ml Hon-Mirin (1 2/3 tbsp)
    2 Frozen Black Tiger Shrimps
    Salt, Katakuri Starch, Water
    50 ml Cold Water (1.69 u.s. fl. oz)
    30g Cold Tempura Flour (1.06 oz)
    6 Dried/Fresh Shiitake Mushrooms
    300ml Water (1.27 u.s. cup)
    1 1/2 tbsp Sugar
    1 tbsp Soy Sauce
    Welsh Onion
    Mitsuba - Japanese Wild Persley
    Kamaboko - Steamed Fish Cake
    Yuzu Peel
    25g Chicken (0.88 oz)
    1 Egg

    鍋焼きうどんの作り方

    <材料>1人分
    1.うどん(冷凍):1玉
     水300ml
     和風だし 小さじ2/3
     しょう油:25ml(大さじ1と2/3)
     みりん :25ml(大さじ1と2/3)
    2.海老天ぷら 1本
     冷凍エビ:2尾 ※ブラックタイガー使用
     下処理に 塩、片栗粉、水、各少々
     
     衣  冷水:50ml
        冷たい天ぷら粉:30g
    3.鶏もも肉   :25g
    4.干し椎茸含め煮:1枚 *生椎茸でも可
     椎茸6枚(25g)
     水   300ml
     砂糖  大さじ 1と1/2
    しょう油 大さじ1
    5.長ねぎ    :斜め切り3切れ
    6.三つ葉    :適量 *茹でたほうれん草でもよい
    7.かまぼこ   :2枚
    8.卵      :1個

    The paper towel helps to cook the shiitake mushrooms evenly with less liquid. Chef substituted the paper towel for otoshi-buta (Japanese style drop lid). :)

      +andy kun I find preparation of individual ingredients no more labour-intensive than, for example, prepping the soffritto for bolognese or something. Just my opinion :)

      Well, something like this was meant to be a meal for many people. Perhaps a normal meal for westerners could be rice and a stir fry one day. The second being takeout. The third day being a roast. So something like this hot pot might be served one or two times a month during the cold season.

      it's "fish cake". You can get them in the frozen section of an asian market. I bought by first one today (for like $3.50) and it was FANTASTIC.

    For those who are having a difficult time finding Kamaboko, keep in mind that kamaboko is a type of surimi. Some regions may call kamaboko: sticky fish paste, surimi loaf, fish loaf or fish sausage. If you still can't find it, a suitable substitute is simulated crab, or simulated lobster surimi. All products are a white fish surimi (usually a cheap pollock is used). For our Jewish friends, the taste is similar to that of gefilte fish, another suitable substitute if you can't find ANY surimi.

      I’m pretty sure that’s a prawn due to the straight body. Even tho some shrimp can grow big, prawns are generally larger. 👍

      In japan, they actually have spring onion/ scallion that big. It is not leek. Leek tastes different.

    Kamaboko is steamed fish cake. A cylindrical kamaboko with a pick spiral pattern is called Narutomaki or Naruto :)

    it works as a drop lid. it evens out the surface pressure and make sure the top parts of the mushrooms gets soaked in the liquid as well!
