Add 3 tbsp soy sauce, 2 tbsp mirin, 1 tbsp sake, 5g flaked bonito, and 4g dried kelp (konbu) to 180ml water and slowly bring to a boil. Once the broth starts to boil, remove from heat until cool and pass through a strainer. This makes enough for about 3 people. Finely cut the leftovers and you have a great filling for onigiri rice balls. :) You can also check your local Asian grocery store for bottled Mentsuyu broth. Good luck in the kitchen! ;)
She makes it look so easy and clean to cook these things, when me and my friend try them, it works.... but the kitchen looks look a food tornado hit us...
Digigarb…. when you used 00 Flour, did you use the same technique of folding the dough? How many times did you fold it? Thats was very clever using that flour...
How could you not love Japan? I just love how they're simply so different. The food is so creative and delicious, and the culture is just beautiful and amazing ^__^
Made this yesterday and they turned out great! Shiny and slippery noodles with the trademark chewiness. My dough did feel dry even with the addition of all the water. Barely needed any corn starch, even during cutting, so I might up the water next time. Rolling out the dough was a real pain and it was very hard. I may have even bruised the heels of my palms. If you have a pasta roller, bust it out. Divided into four and rolled to #4 thickness was perfect.
If udonko is hard to get, substitute cake flour. It's a finer flour with around 9% protein. Probably the closest to udonko of the western wheat flours.
Great method to cut the noodles. My mother used to do the same when she made her type of noodles. The homemade take a little more time and effort, but are so good!
This brings back memories! I was about 13 when I tried to make this with my brother. We were careless and didn’t ferment the dough, but still, it was fun!
If your cake/pastry flour has 9% protein content, you can probably use it for udon noodles. In Japan, udon flour usually has about 9% protein content :)
we always buy the ready made udon noodles at the stores, but now we know how to make it! Thank you. Home made noodles are far more tasty than ready made.
Japanese people. Not a lazy bone in your body. This is why your culture is so amazing. This young lady and her dog are now apart of my family. Thanks for the Udon recipe. Now I have to order Japanese food today lol because I need some haha
This is amazing, if I ever try making this the results would be disastrous, so I am just gonna watch and hope that someone makes this for me when I visit Japan.
Can these udon noodles be frozen after cooking to reserve them for later? Our oriental market rarely has frozen fresh udon noodles and I wondered if it would be possible with this recipe.
You can try all purpose flour or churikiko (中力粉). Choose the product with 9.0~9.5% protein content. :) There is a special type of wheat flour called Udonko (うどん粉) and it is best for making udon noodles! Example: www.nisshin.com/products/detail/4902110341881.html
+jnir blanco hi:) do you mean how you can find the percentage of protein in the packet of flour? you can easily find it on nutritional facts label, usually on the back of the packet
I was just joking around, the show is called "Cooking with dog", I could't let it slide. I had an image of someone being genuinely confused and questioning the recipe. That's pretty funny right?
This looks delicious! My favorite little noodle place in Chinatown has handmade noodles like these so now maybe I can replicate their food! This is such a good recipe for an international audience too; the ingredients are available almost anywhere!!
this is really great to watch, i love udon noodles. i'm glad i found out how to make them. the only part that will be hard is the rolling and waiting part.
Pasta making at its best, So simple and what a great taste when you add the favorites like duck and spring onions or pork with fresh veg even beef and veg. What a delight this host is to watch.
Thank you so much for showing udon making. First time i made udon from stretch...step by step from the video. Noodle is so chewy and great in texture. Immediately, i serve it cold and some shuyu...Woow it feel like heaven and earth oichii desu ne!!!
This reminded me when I was a kid and was making noodles with my mom and gradma! Procedure used to look so similar... I will try this recipe soon, definitely!
Aside from Francis being completely adorable (love the pompom on his head!), I have to say plastic bag + rolling pin = GENIUS. Now I'm wondering why I didn't think of that. Looks delicious!
My udon noodles came out great. They mashed up the frist time I put them into the water but the rest of the noddles didn't they taste wonderful THANK YOU

Chef is so skilled. Her moves are like pieces of art. So much care in everything she does. Really Beautiful.
She's like everyone's more skilled mom
I agree ^-^
Not really no , since if my mom was more skilled like a little more she would only be able to make instant noodles taste better
Made udon today using Italian 00 flour. It's 9.5% protein and they came out perfect! Tuff and chewy as they should be! Thanks for this video.
Digigarb…. when you used 00 Flour, did you use the same technique of folding the dough? How many times did you fold it? Thats was very clever using that flour...
Did you use the same folding method?
Has this been on YTube for 10years?! I remembered it, but did not think it had been this long. Truly a timeless classic. :)
So gald you've been enjoying our videos for a long time!😍 The video may be old but you will still enjoy the recipe in 2022!😆🍜

She's a Cooking Mama. I think she's better than the video game. All in favor? Like this video!

Thanks for the tips ^^

No you can’t make it with cake flour the gluten structure is too weak never reach the udon texture.
i love making dishes from scratch but OMG this is like giving birth to dough >

I would assume you could. Just make sure they are coated in flour well as they might stick. Also probably best to cook them from frozen.
I remember eating these every morning when I was in Japan.
I miss them so much!!
can i use all purpose flour instead of Wheat Flour ??

I was just joking around, the show is called "Cooking with dog", I could't let it slide. I had an image of someone being genuinely confused and questioning the recipe. That's pretty funny right?
I laughed way too fucking hard lmaooo
+Dale Smith I thought the comment was funny and nothing to do with cultures that actually eat dogs. Simply relating the name of the channel. 🐠
i want to eat it. really enjoy these cooking videos. they help to give me more ideas.
I appreciate cooking with animals
That was quite precise and well appreciated, If only more people were to contribute as efficiently!
Omg, Francis talked so fast in 2010!

Haha, when I first saw the dog and the tool after the noodles my thought was 😱 skinning the dog for use in the recipe. Quickly realised otherwise.
