    the old lady, when she said that the noodles taste better cause of water and...her beauty XD she's adorable, I like her attitude because that means that they don't only have delicious food but also a warming service for customers, I want to go there!!!!

      It's not fear that makes them shorter, it's the time to make it and get it out to you. I have been letting them go longer though :) but I should probably make the shows a little tighter. It's hard to edit yourself -- I want to keep EVERYTHING in but I'm getting better at seeing the content more objectively. -john

      ONLY in JAPAN Got it! I understand a little bit more now. Maybe someday you could make a "lost footage" or "bloopers" video series where you use some of the footage from the past that you didn't want to include in your standard episodes. Either way, I'll keep watching because your show is amazing and you are a very entertaining host. :) Thanks for the reply, btw!!

      She was the star! Loved talking with her. She refused my money when I wanted to pay -- called me her guest. I was surprised a lot of foreign tourists are finding this spot too. It must be in some guide books. She has been learning English to try to communicate and it makes the experience so much more fun. Thanks for watching it!! -john

    I absolutely love this restaurant. It's so relaxed, so informal. Getting to go back into the kitchen that way, picking your ingredients - It's like going to your grandmother's house for dinner. This is what family pride looks like. Fabulous. I would love to find a place like that here in the States. Thanks for including us, John.

I recommend eating your food like Mark Wiens it's obvious that, that guy does those mouth chewing things to make it look satisfying. so try something like that :P

      li wu Many high end restaurants don't wear gloves. Usually the only time people in restaurants wear gloves is in fast food chains. Also, gloves can carry bacteria as well.

      One of My favorite foods is Udon. Udon is a white noodle made from wheat flour. It is thick and soft. We can make noise when eating these noodles. Slurping when we eat hot Udon helps prevent us from burning our tongue

      Yeah, I live in The Netherlands near a university and the last couple of years there has been an influx of students coming from China. So in my neighbourhood an Asian toko opened and they sell vacuum packaged udon, I really love the texture of those thick noodles.

    One of my sister's favorite noodle. Udon gives sense of feelings of satisfaction when eaten. The warm soup stock also makes your stomach comfortable. People with sensitive stomach can easily enjoy it.

    This makes me miss Japan so much, I remember being several times almost overwhelmed by how great the broths taste in those small, family run restaurants. And the great atmosphere too, even if I was a slow eater, people still chatted with me and told me to take my time. The speed with which they eat is something that would cause my stomach to break I fear lol. Is there any research on whether this affects them in any way to not chew the food at all?

      Carine E. Right! The small family places owe their livelihood to making it. Their reputation is important and you'll never get a bad bowl. There really is an extra element of love -- tastes better at Miyagawa's maybe because you feel that connection with the owner / chef. -John

    Sometimes it's the simplest food that has the most passion and family tradition with it. Family run Udon places feel like they have the same passion in them as the great European family run bakeries, it's that same love and dedication to the craft.

    Loved the episode John! I had ramen before but I never had udon. I always imagined it to be very similar to ramen. I look forward to get the chance to try udon in the future!

      It's actually very different i'd say! Surprisingly, Udon is a lot more light opposed to ramen, as the broth for ramen tends to be very oily and heavy. I hope you try a bowl soon!

      YES!! Great memory. I shot this the same time (and the same town) at the square watermelons. When the farmers told me about Miyagawa's udon, I had to visit and she was simply an amazing person. The udon was of course delicious!! :P good catch -john
