As a baby boomer, I’m certain that I’ve never heard or tasted over 3/4 of these sandwiches--I’m not sure where they were popular but definitely not in the Pacific Northwest!
I'm 80. Large family. Never heard of any of these!!!!!! (Except braunschweiger - with mustard and pickle. My grandpa fixed that . Guess too poor for that ritzy stuff.) More like PB, PBJ, BLT, tuna/chicken salad (hb eggs and pickles, etc)
One of my coworkers, who lived on a farm that had cattle, brought a tongue sandwich to work and gave me a taste. She’d done it up right: French bread, red onion, leaf lettuce. It was delicious - tasted like intensely-flavored beef.
This baby boomer never heard of most of these sandwiches. Furthermore, I wouldn’t have even eaten any of them including the 2 or 3 I may have heard of. They all sound disgusting.
Pimiento cheese is still big in the South. I never heard of it when I lived in the Midwest.
I'd eat that chicken a la king over a southern buttermilk biscuit every day of the week!

Meats are very expensive, at least this video gives you ideas for options. Occasionally.
My mom once told me how she was served tongue for dinner and was told it was roast beef. She wasn’t fooled.
I like tongue, but only developed taste for it after 40 years old.
I often took sliced tongue with mustard or horseradish sandwiches as my lunch for school.

PBJ butter both sides to cook like a grilled cheese. Wicked good
I’m just the opposite- love peanut butter but not jelly, and I‘ve never liked the salty/sweet combination. Just not my palate.
