Looks delicious! I worked as a cook when I was 19 at a Chili's Bar and Grill back in 1989. Later in 1990 is when the original "Awesome Blossom" was born.
Made this last night and it was very tasty. The one thing I'll do differently next time is, after cutting the onion on the lid (don't need the lid in this case obviously), I'll cut the bottom off leaving individual onion blooms/slices vs. a blooming onion. The reason is that, at least with my air fryer, the top part of the onion was cooked well, but the bottom onion part was very al dente. Also, the coverage of the flour, egg and bread crumbs will likely be more uniform if I was doing the onion blooms vs. than trying to pour it down the blooming onion, as the top of each piece had yummy deliciousness, but not so much on the bottom inside. But again, this is delicious and so much easier/cleaner/healthier than deep frying it. Thanks so much for the recipe!
Do you think that maybe cooking it upside down for a while would help? I have to shake the fries and tots that way. I haven't tried the recipe yet myself, I'm reading through for helpful tips.

It will make a mess of the onion if you've cut it correctly. You have to make your cuts deep into the onion, almost cutting it in half for it to bloom.

Should be made with chickpea flour or a.k.a chat flour. If you use regular white flour! You'll lose the Indian authentic taste and texture.
My only suggestion for this recipe, try substituting the sweet paprika for smoked paprika. 👍👍
