Hi Akis, when I put the finished pasteli on the waxed paper, I was not able to detach it afterwards. What might have happened? I tried detaching it when it was warm, when totally cold, and still no luck. Seems like I will not be able to enjoy it even though it smells and tastes great. Thanks for your help!

In ayurveda, we do not put honey on high heat as it's chemical properties or chain of molecules are disturbed and does not give the benefit. Honey can be in warm water, warm temperature. My question is this- how old this recipe is because this much i understand that Greek is a old civilization like India.

Hi Akis, this is a beautiful recipe, and we make something almost identical in India using sesame and jaggery (the purest form of sugar) (just Google 'til ke laddu'). I was wondering - if you're using raw, pure honey, it is so extremely nutritious and filled with great healing enzymes, but when you heat the honey on flame all these enzymes will be destroyed. Is there any other way to go about this recipe without heating the honey?

When i was with my greek family at the church, we ate some sort of sweet grain with raisins
It's years ago, and my greek is just okay, but by far not good enough to ask them what it was or what it was called like.
Do you know what i mean? What is its name? Maybe you even have a recepie?

If it was wheat grains, maybe it was kolyva? It's traditionally given out after a service for someone who has passed. Boiled wheat, powdered sugar, nuts, raisins and other stuff. If this is what you remember, tell me and I'll find you a recipe.

Say Akis love your channel, but I just have one question for you. I know honey is good for you and a super food, but does it still hold all its enzymes, vitamins and after you cook it for so long?
I've been to several sites that say you ruin the honey by heating it more than 40c.

I had the same question... How about using regular brown sugar with little bit of water (why not, if already we destroy almost all healthy ingredients in honey?) and after adding sesame into caramel and removing from heat, wait really shortly and then add a bit honey - it shouldn't change texture too much and might keep some healthy ingedients in honey (hopefully)
