Question: Are you supposed to clean the guts and bile out, after you slice the lobster down the middle? Not sure if Im seeing correct but looks like there's still guts or stomach bile when it was cooked on the skillet

Well, I guess that's KALA NAMAK (English translated as black salt) a very well-known special variety of black rice or wild rice... My uncle used the seeds in farming but it needs lots of water and care so after few years he gave up... It's so good that the entire area almost 300 sq. meters around the farms smells like heaven :)
It is very sad that only a few in India are farming this nice rice... Believe me, this is much better than the finest Basmati rice...
The Chef did well... the only thing I didn't like was he didn't clean the lobster before boiling/frying or maybe he didn't record that part in this video...

The paste looks like either gochujang or red miso, but the sauce I'm not sure... Clearly there's mustard

Не понимаю логику....брать аккуратно щипцами по одной тушке лобстера, чтобы потом кромсать их колотушкой)) уж проще с подноса в кастрюлю высыпать было....а про отсутствие головного убора у повара, я вообще молчу))))
