Please see the description box for the full recipe, helpful tips, and details. Some have asked about how to achieve the color like mine. It really depends on how dark the purple sweet potatoes you bought. The ones I used in the video has a very dark rich purple. If yours are lighter, add some Ube extract to enhance the color. The butterfly brand is good. 🙂
Wow! This recipe is good for serving classy ube bread. This recipe is also very helpful to listen to at nite. The narrator is a very effective sleep therapist.
I tried these a few months ago but i just thought i'd drop by again and say that these were actually really good. It was a big hit in my family. Thank you Aimee
I made this last night Aimee and it was a hit! I copied everything as shown in the video and description box and the outcome was perfect. I was gonna share the photo of my ube milk buns but I couldn't copy paste it on this comment box. In order to achieve a bright purple color, I put some drops of ube extract. Thank you Aimee for being so detailed in your presentation. I appreciate the dough mixing speed tips and the emphasis you gave on the final dough appearance. I love your channel btw. I am looking forward to making your strawberry cheesecake macarons, soon, God willing😋
Hello and good morning from sunny Arizona! First of all, I would like to say thank you to you for sharing your knowledge and passion in baking. Your videos make baking look so easy and do-able especially for beginners like me. I am looking forward to see your updated version of ingredients in cups. Yes, lol, I am one of those who don’t have a scale but willing to try the recipe ASAP. Thank you again and Hod bless you in your baking journey!
You're a great teacher, Aimee! I love how you explained everything - especially important for someone who does not bake like me. The color achieved is absolutely beautiful and the buns looks yum!
I had some success making these buns, and some challenges :) I measured my dough by weight but it was drier than yours, it was barely sticky at all. I think Canada's all purpose flour (12% protein) is just super thirsty so I'll use less flour next time! Also FIY for other viewers, this takes a long time to knead by hand, about 30 minutes for me. I didn't make the filling so I made 9 buns instead of 12; however, I think I should have made 12 anyway because mine took about 42 minutes to bake to reach ~200*F internally... but they taste so amazing! I've never had a coconut flavored bread before, and I definitely need more of it in my life :D Thank you!
Thank you so much for sharing this wonderful recipe. Your directions are so clear and easy to follow. I just made this bun today. It came out great!! Thank you!!
Just made the buns using 75% ingredients for 20cmx20cm (8 inch) square pan but reduced 50% yeast (just 5 grams which I find already enough). I made 9 buns, each weighed 78 grams. They turned out exactly like the video. They the softest buns that I’ve ever baked so far! I skipped the filling as we like to eat them plain or with kaya jam. Great recipe!
can’t wait to buy ube tomorrow!! I made your original milk buns and was totally satisfied! I also need to make banh mi tooo! My dough enhancer and Vit C just came in for that. ❤️ Thanks so much for the awesome results.
Oh my cant wait to try this. I made your Coconut Pandan milk bread and my husband loved it! Followed your recipe to the t and it came out just like yours, im so happy! Thank you Aimee. 🤗
This ube bread looks so yummy especially the ube filling. I can't wait to try your ube bread. Question about your ube filling. Is it possible if your ube filling recipe can be use for ube ice cream? I'm also searching for a creamy ube ice cream recipe that I can use to sell for extra income. I hope someday you can share a good gourmet ube ice cream recipe for me to try. Thank you for sharing your recipes.
I just made your bread! I don’t have heavy cream for the filling instead I used cream cheese and added some sugar and it turned out AMAZING!! Thank you for the recipe.
Devon Montecillo I actually just eyeball it! I kind of put 1/3 of a bar and mixed with the smashed purple yam with sugar. Tasted it as I go along until I feel the right sweetness. Don’t put too much tho, the cream cheese will melt when baking and will make the buns more dense. And yes, I substitute the white chocolate with sugar.
Sis ơi, I love all your bread recipes, your instructions is so easy to follow. Do you have cream cheese rolls/ bread recipe? I would love to learn from you 😁
Hello again Aimee, happy to let you know that i made the buns yesterday and it turned out great - light, fluffy and tasty. Thx. The only thing that I was not able to achieve was the color of the buns. Pls confirm only use 100gr of Ube for the buns and 200 gr for the filling? Or 150 gr of Ube for each? Thanks again. Keep up the good work, can’t wait to see what is next 😉.
Thank you! The measurements are correct as listed in the recipe. The color really depends on the purple potatoes you purchased. Their colors do vary, lighter or darker. You can see in the video how dark mine was. If your dough is light, you can add some Ube extract to enhance the color. Butterfly brand is a good one 😉
please continue to use grams and ml for your recipes! it's much easier and helps me know my measurements are accurate. i'll be trying this recipe soon :)
Hi!! Just curious why we need to use melted butter here instead of softened butter? As most other milk breads/bread recipes I've tried uses softened butter instead. Can't wait to try this recipe!
Thanks Aimee for the recipe. I made it and it was delish!!! I was too nervous about the filling oozing out so I ended up have a lot of extra left over. Do you think I could freeze it for next time or will the consistency be too wet? Or how long do you think it'll last in the fridge? Thanks again for the recipe!!!
I do like your tutorials slow and clear recently because covit 19 i stay home a lot so I been watching a lot baking video I like to made from purple sweet potatoes too is my favourite colour but one thing I don't understand is you call sweet potatoes yam ?
You may have to adjust the water. It might need a little more. Depending on your flour source it might be drier than mine. Also, make sure the yeast you are using is still active. And depending on what type of yeast, it might need to be activated prior to adding into the flour mixture. Hope this helps.
Hi Aimee, I just want to say your baking is amazing, I have a question, if I use the taro instead of ube, do I have to put more sugar in the filling or any ingredient measurements change? Thank you. 👩🏼🍳🧁🥧🍪🍰❤️💕
Thank you!!! That’s so sweet and kind of you to say 😘😘 As for your question....Maybe a little more sugar to the dough. It’s not as sweet on it’s own compared to purple potatoes. Also, for the filling, you can taste test it and adjust to the sweetness you want. 🙂
Thank you so much! My dough wasn't as wet as as yours is and after baking it, the bread didn't pull apart in a stretchy way like yours did. Do you think maybe I didn't mix it long enough?
Hi Aimee! If I want to bake these first thing in the morning, can I leave the buns to proof in the refrigerator overnight after they've been filled? Thank you so much! I can't wait to make these.
Alternatively - are these buns still nice and fluffy the next day? If I bake them the night before then give to friends the next day, how do they hold up? Oh, and will this work if I use frozen purple yam, thawed then steamed? Thanks!
Please see the description box for the full recipe, helpful tips, and details. Some have asked about how to achieve the color like mine. 230 F? That’s the highest?

mmmm looks so yummy. I ordered some extracts for pandan and ube but it looks like I have to go get the fresh one from the store next time!
The fresh ones totally enhanced the bread. It also makes the filling taste incredible 🥰🥰
Yummy yummy 😋

Yay!! Another successful attempt. Love it!! 👏
Hi! How much cream cheese and sugar did you use in your filling? Did you sub the white chocolate for the sugar? Thank you!
Yum!!! I am going to try this as soon as I can find myself some yeast!

Sis ơi, I love all your bread recipes, your instructions is so easy to follow. Do you have cream cheese rolls/ bread recipe? I would love to learn from you 😁
Working on one 😊
Looks good!
Thank you!!
Thank you very much for your consideration!
You’re welcome ❤️
Do you have the recipe in cups?? Thanks for sharing your recipes. Keep the videos coming!!😁
You’re welcome. I will have to convert the next time I make it. However, I would recommend a scale to be exact 🙂
You can see in the video how dark mine was. If your dough is light, you can add some Ube extract to enhance the color. Butterfly brand is a good one 😉
Hi Aimee, looks so yummy. Is there a reason why you add white chocolate to the filling? Don’t have it hand, ok to skip? Thx.
Enhances the taste. Also helps to thicken it well after cooled. Yet, melts while baked so the filling is super creamy.
Can we use cocunut flour?
Hi!!! I LOVE these buns! Is it possible to make the dough and filling a day in advance? If so, at what point would you refrigerate the dough? Thanks!
Place the dough in the fridge after the first rest. Take them out the next day, shape, fill, and let it come back to room temp, proof, and bake.
Hi Aimee, I am thinking of replacing the ube for durian to make Durian milk bread using your Ube bread recipe. What do you think?
It’s fine, but be careful with the amount of durian. It tends to be more watery than Ube 🙂
So... i have a plan for tomorrow now 😄😇
Hope it worked out 🙂
@@AimeesCooking nah... i couldn't find my sweet potatos 😩😟 my parents took them to work for lunch 🤪😂 i have to buy some more.....
I see lol 😂
Can’t wait to try this 😍
This looks so good. Is it also chewy?
Thanks! It’s soft.
Is there a substitute I can use for white chocolate. I bought everything except the chocolate :)
You can use some condense milk if you have, otherwise, just plain sugar 🙂
Can I use halayang ube as filling instead of the filling with white chocolate.Thankyou
do you have other measurement using cups tsp and tablespoon?
Sorry, I do not.
Hi, is it possible to use ube jam instead of freshly steamed ube?
Yes, that’s fine to fill it with the jam.
Can you please share your measurements by cup and measuring spoon. Thank you
Can i use the olive oil for the spray
Olive oil can burn easily under high heat condition and it will taste bitter. Would recommend something else.
I just made it, it's so good! How should I store it?
Awesome!! Airtight container or ziplock bags are fine. 😉
please continue to use grams and ml for your recipes! it's much easier and helps me know my measurements are accurate. i'll be trying this recipe soon :)
I like gr ml too for better accuracy 👍🏻
Can I substitute the ube yam with ube purple yam jam if that’s all I can find? This is for the dough.
Yes, but you might have to add just a little less water to the flour to accommodate this replacement. 😁
can I use ube powder instead?
Hi aimee! 👋🏻
Can I substitute the heavy cream with fresh milk? If can how ml i have to use? Thanks!!
can i use ube powder instead of the fresh ube? and how much?
Hi!! Just curious why we need to use melted butter here instead of softened butter?
As most other milk breads/bread recipes I've tried uses softened butter instead.
Can't wait to try this recipe!
You can use room temp butter. I like to melt it to help increase the temp in the dough a little. Yeast don’t like to work in cold temp.
omg i LOVE your recipes. it's so hard to find recipes like this and i forgot all about this bread until now. thank you!!
You’re welcome
Thanks Aimee for the recipe. I made it and it was delish!!! I was too nervous about the filling oozing out so I ended up have a lot of extra left over. Do you think I could freeze it for next time or will the consistency be too wet? Or how long do you think it'll last in the fridge? Thanks again for the recipe!!!
Should be fine in the fridge for a few days. I would prefer that over freezing it.
Thanks for the quick response!! Can’t wait to make it again :)
You’re welcome 😉
Thank you so much your recipe! Can I replace yam with taro?
You’re welcome and absolutely yes!! 😁
Aimee - can I make the bread without the filling? The bread dough looks fluffy and good.
Absolutely. 🙂
Aimee's Cooking thanks for the quick response. Will make it tmr.
You’re welcome 😉
Hi aimee!can i boil the ube instead of steaming it?
Yes, you can.
I do like your tutorials slow and clear recently because covit 19 i stay home a lot so I been watching a lot baking video I like to made from purple sweet potatoes too is my favourite colour but one thing I don't understand is you call sweet potatoes yam ?
It’s sweet purple potatoes.
Hi Aimee’s can I use ube powder 🤔 , Thankyou. All the best to you 🍀
Taste will differ and might have to tweak liquid amount 🙂
If I don't have white chocolate what can I substitute it with?
Replace with condense milk
Any substitute for egg?
Sure, just omit it and add more liquid to help compensate.
Oh my goodness I have to try this Chi! My mom will love it
It’s really yummy em. I am sure she will love it 😉
i made your recipe mine doesn’t rise I follow your recipe 😊
what happened when my dough is not wet and mine looks dry follow the time from the video too.
That’s so sweet and kind of you to say 😘😘
As for your question....Maybe a little more sugar to the dough. It’s not as sweet on it’s own compared to purple potatoes. Also, for the filling, you can taste test it and adjust to the sweetness you want. 🙂
Aimee's Cooking thank you so much. 💕👩🏼🍳
You’re welcome 😉
Hi Aimee! If I want to use active yeast does the measurement stay the same as the instant yeast?
Add an extra 2 gr 🙂
If I use an ube halaya paste as opposed to the potatoes and coconut mixture, how much paste would u recommend?
Can’t wait to try this tom. ❤️❤️❤️
Yay! Hope you like them. Keep me posted 🙂
Aimee's Cooking omg! They were amazing!!! Thank you.
Hi my name is Ngoc can you tell me which powder to made perfect bread thank you 👏👍
Powder? Will you clarify what you meant?
Would I be able to omit the filling and just bake the bread as is?
Yes, absolutely. Still tastes amazing 🙂
Thank you so much! My dough wasn't as wet as as yours is and after baking it, the bread didn't pull apart in a stretchy way like yours did. Do you think maybe I didn't mix it long enough?
Sounds like that might be it.
Aimee, would it be ok to omit the white chocolate for the filling? Thanks!
Yes, but it doesn’t add a lot of flavor to the fillings. You can add some sugar or condensed milk for sweetness.
Thanks!
can i use this recipe for the ube pandesal? thanks
Sure, that’s fine.
