Plant protein is not equal to meat protein. If you want less cuts of meat to deal with, eggs are the perfect food and can be scrambled and added instead of beans. Butter is also a great source for fat and fat soluble vitamins that you can't get from plants.

Walnuts make an excellent taco style crumble/meat. Tofu for sure works as a protein. Cashews or peanut butter can make excellent sauces to pack in the protein to any dish. Quinoa is a good source of protein for a grain. Also good old protein powder can be tacked on the side of a meal to balance out things. Hemp seeds are great to top on any dish. Also peas are surprisingly high in protein. There are all kinds of options!
I thought you were in your 20's. In your 40's, that corn will come in handy for keeping the meat moving through your entrails. It's like ball bearings.
Those babies were actively being neglected by their parents because their caloric intake was too low, and their diets were restricted to raw veganism. Veganism can sustain human life, adult and child, it's just a matter of reaching proper caloric intake for ones BMI.
