Cool Whip Icing

  • If you are looking for a super easy, not too sweet icing for your next cake, you have found the right recipe!
    Cool Whip Icing
    1 small box instant pudding (we used white chocolate for a white color) 1/4 cup powdered sugar
    1 cup milk
    1 small container Cool Whip, thawed.
    Mix pudding mix and powdered sugar together in medium to large mixing bowl. Add milk and mix on low speed with hand mixer until blended.
    Let mixture stand for 3 minutes at room temperature.
    Fold in Cool Whip until fully combined.
    Frost cake or refrigerate if not going to use until later.. Refrigerate frosted cake until time to serve.
    Use any flavor pudding you like. Remember that vanilla pudding mix will yield a more yellow icing. If you want a white icing, use the white chocolate flavor.

      I suppose you could, may be thinner, perhaps you could leave out a couple of tablespoons of milk.

    Why not use REAL whip cream, so much better than Cool Whip?

      You sure could do that. The trouble is is may not be thick enough and won't hold up as well. You could stabilize it first, however, with gelatin, then I bet it would be super!

      You can actually use a box of instant pudding mix with heavy whipping cream. There's a website that has the recipe. If you want it just let me know. I've made it several times over. All you need are those 2 ingredients and yes, it's pretty stable. You can use any brand of instant pudding but I like to use the Godiva brand because it's milled finer. Only downside? You're limited to the flavors you can make. When I found myself in that situation I just bought a box of instant pudding from the Jell-O brand then I put it in my mini chopper, blitzed it till it became a finer powder. Worked great 👍 Hope this helps...

    Better recipe is mix cool whip with 1 can of frosting, much easier. If you use powdered sugar it will be lumpy unless sifted.
