Some tips to make the perfect traditional Gemista every single time! This traditional Greek recipe for Gemista falls under the category of Greek dishes called “Ladera”, meaning Greek dishes prepared with olive oil. So make sure to use some good quality extra virgin olive oil, which will surely lift the flavor! Although the traditional Greek recipe for Gemista doesn’t call for any butter, a little secret is to add just a little bit inside the Gemista before adding the stuffing for some extra flavor. As the peppers are not as juicy as the tomatoes the stuffing of the peppers always comes out a little dry. To avoid that, spoon some extra tomato juice over the peppers and they will become just amazing. When cooking the Gemista, make sure to cover them with aluminium foil as the steam allows the rice to cook and the vegetables to soften without them ending up being burnt. When tomatoes are in-season they are obviously the best choice to prepare this Greek dish, but for an all-year-round dish you can use eggplants and peppers or even courgettes! Slice off the top of the eggplants and remove the flesh, using a spoon. Cut the flesh of the eggplants in small cubes and set aside, as you will use them later for the filling of the Gemista. Slice off the top of the peppers and remove the seeds and white parts from the inside. Place the empty vegetables on a large baking tray. Try to leave the vegetables as thin as possible, leaving just a little of the flesh, but be careful not to poke through their skin. Season the empty vegetables with a pinch of salt and sugar and add a little butter on the bottom of each one.Prepare the sauce for the Gemista. At the end add the flesh of the eggplants (chopped) and the chopped garlic and sauté, until softened. Add the rice and continue sautéing, unit it becomes transculent. Remove the pan from the stove and stir in the fresh herbsAssemble the Gemista. Spoon the filling inside the empty vegetables and place the potatoes, cut into pieces, in between the vegetables. I never thought to leave the beans and corn out of chili! Two foods that have been bothering my system. Thanks for sharing. Now I can enjoy one of my favorite foods again. The mushroom pizza also looks amazing. Thinking cauliflower rice would also work as a replacement for the rice in the stuffed peppers.
If you're doing a raw filling, cucumbers would work..I would not try to bake them. You'll end up with a puddle of water (cucumbers are mostly water...zucchinis have more pulp)....

Zero sugar, zero starches, carbs are only %5 of our intake daily and only from certain veggies. The rest of our daily intake is %75 fat and %20 protein.

Stuffed zucchini are my favourite. My mum's recipe is a bit different though. She slightly boils the zucchini, then she puts a little bit of tomato sauce and fresh basil in them, before adding the meat stuffing. The meat is raw and she just puts salt, pepper and garlic in it. Then she puts some bread crumbs on top and cooks them in the oven. She freezes them and we eat them all year long. Great recipes anyway ;) Love your channel !

I love what you do. Your recipes give me plenty of ideas. I was wondering if you could create a prep series that reuses the ingredients that you buy throughout the week to make the meals as budget friendly as possible. For example, I usually buy a big bag of carrots to use in a soup or to cut up for snacks but it is hard to use the whole bag sometimes. Same goes for a whole chicken. For example, I usually buy a big bag of carrots to use in a soup or to cut up for snacks but it is hard to use the whole bag sometimes. Same goes for a whole chicken. I usually have two dinners out of one chicken but by the 3rd day I am clueless. I would love to see a marriage of your wonderful dishes with a small weekly budget in mind. Thanks!!!!! I voted :)
