A bit like a Fritatta really, you could put pretty much anything in there, I'd chop ham, slice tomatoes thinly, chop basil, sprinkle some msg over all of it and add it to the mix.

Think it would be nice with fish chunks in it like a mini fish pie or put greens in and make it into a fried bubble and squeak or just some cheese sprinkled on top. Looks bloody luvleh
I would have added some flour into the potato mash to help it form better, maybe some finely chopped red pepper and then would dip them in egg followed by breadcrumbs before frying them.
