  • Lots of tweaking and recipe testing have led me to this: the BEST Banana Bread Recipe I've ever tried.

    I'm so excited to share this one with you. Easy prep (under 20 minutes!) and delicious results!

    Ingredients
    1 1/2 cups well-mashed overripe bananas this is usually 3 large ripe bananas for me (355ml/385g)
    1/4 cup canola or vegetable oil (60ml)
    1/4 cup unsalted butter melted (60g)
    2/3 cup light or dark brown sugar firmly packed (135g)
    1/2 cup granulated sugar 100g
    2 large eggs lightly beaten, room temperature preferred
    1 Tablespoon vanilla extract
    1/4 cup buttermilk 60ml
    2 cups all-purpose plain flour (250g)
    3/4 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/4 cup coarse or granulated sugar for sprinkling optional (50g)
    Instructions
    00:00 Introduction
    00:24 Preheat oven to 350F (175C) and grease the bottom and 1/2" up the sides of a 9x5 bread pan. Set aside.
    00:30 Combine mashed bananas, canola oil, and melted butter in a large bowl and stir until well-combined.
    01:52 Add sugars and stir well.
    02:01 Stir in eggs and vanilla extract.
    02:26 Add buttermilk and stir until thoroughly combined.
    02:48 In a separate, medium-sized bowl, whisk together flour, baking powder, baking soda, and salt.
    03:06 Add dry ingredients to wet and carefully, gently using a spatula (not an electric mixer) fold ingredients together until just combined. Don't overmix the batter or your banana cake could end up dense/dry.
    03:45 Pour batter into prepared pan and, if desired, sprinkle generously with coarse sugar.
    04:42 Transfer to 350F (175C) oven and bake 60 minutes or until a toothpick inserted all the way into the center of the cake comes out clean or preferably with a few moist crumbs. Do not over-bake your banana cake or it will be dry.

    I really MUST try this banana bread recipe! It looks exactly like the banana bread my Mom made for us when we were kids! We are now 73, 70 and 67. I'm the 70 year old "kid". 😃

    My family voted today on the best banana bread recipe I've made this year. This is hands down the best I've ever made! 1/2 butter and 1/2 oil, buttermilk and to top it off, the sugar on top brought the grand finale. Thank you!

    OMG!!! Sam this recipe is honestly the absolute BEST banana bread I have ever had in my life. I was having a banana bread craving about a week ago so I just googled a recipe. It was okay but lacking in flavor. More than half of the loaf is still sitting in my kitchen. That recipe included cinnamon, and I thought maybe next time I'd add a little bit more. Your recipe doesn't call for any cinnamon but did include buttermilk, which was the only ingredient I had to go to the store for. The difference in flavor is CRAZY! Your recipe turned out much brighter and much more moist. And the sugar on top made the yummiest crunchy topping. My bananas were just barely brown so I can only imagine how great the recipe would be with very brown bananas. Sorry for the rant but I am so impressed with this recipe and literally every single recipe of yours that I've tried has been excellent. You need to be on the Food Network!

    I just made this and it was great! A tip: if you want to ripen your bananas more, pop them in the oven for 10-12 minutes at 350 while they are still in their peels. They will come out totally blackened and very mushy on the inside…which is exactly what you want for baking!! 😊

    Banana bread in the oven. It’s for my church Christmas breakfast. Banana bread usually taste even better a few days after, that’s why I am making it two days before. This was the best recipe by far, I was googling all day and the butter oil combo did it for me. I added chocolate chips and put slices of banana on top for decor. 😁

    I made this twice and it is by far the best banana bread recipe out there! The first time I made it I forgot to add the melted butter (left it in my microwave and totally forgot about it) and it still was delish! The second time I didn’t forget to add the melted butter and OMG, to die for!

    just tried this and it turned out so delicious!! it was verrryyyy moist and the flavor was just so good. i reduced the sugar to 3/4 cup and added a teaspoon of cinnamon. i also made a cream cheese filling since i had extra cream cheese and topped the bread with some chopped walnuts and chocolate chips.
    this will now be my go-to recipe!! thank you so much sugar spun run!

    First time I tried your Banana Muffins I added Orange 🍊 Zest in and little bit Whisky 🥃, oh of course my favorite thing Dark and Milk Chocolate Chips too, and add on top Your Streusel Recipe and sprinkled Organic Tamarind Sugar My husband and my adult boys devoured them.     I can always depend on your recipes to turn out fantastic. I’ve made the banana muffins and this bread. I didn’t have any buttermilk, and it was close to midnight, so I used sour cream. I double the recipe for 2 loaves. They turned out great.

    Hey Sam, I just made this recipe. Used your buttermilk substitute with lime juice as the acid. Had small eggs so used 3 instead and had some homemade blueberry sauce so I decided to make it into a blueberry banana bread..It was simply amazing!! I decided to cut into it while still warm and the texture shocked me!! it was so soft and moist...Couldn't believe it was my own baking as I'm a novice baker!! Cheers to this one!!🥂🥂🥂 I'm curious to try this out again but with real buttermilk...Thanks!!

      @@SugarSpunRun Hey Sam, so I just made this banana bread again to give to someone. First time I made this it developed a huge crack along the entire length to one side. I thought, no bigs as I seen other people's banana bread crack as well. This time, it developed two cracks down the length on either side of the center-line and between the cracks looked like a crusty cap or hat on my bread. Was kinda ugly but texture inside and taste was on point. I did double sift my flour. Could that be the cause of the cracks?

      You could try experimenting with them if you'd like. I haven't personally added any of those so I wouldn't be able to advise exactly how much of which ones to add. That's really going to be a personal preference. :)

      I'm doing very well, and I hope the same for you! You can cinnamon, but this is entirely up to taste. I would guess somewhere between 1/2 and 1 teaspoon. Enjoy! :)

      I used 3/4 cups of brown sugar only and it is still moist and delicious. I have type 2 diabetes so I usually use less sugar 😊

    Just made this, turned out amazing flavor wise, however it didn’t grow as much as I wanted it to. I had to separate the batter into two bread pans (they were smaller), and made a buttermilk substitute instead (buttermilk is extremely hard to find heres where I live). Could this be the reason.

      Hmmm breaking it into 2 pans shouldn't cause you any issues. Are your baking soda/powder still good? That's the biggest thing I could think of here. :(

      I haven’t tried it so I can’t say exactly how it could be done but it could work. It may need to be thinned or the amount adjusted, but without having tried it I just can’t say for sure. 😔

    I'm pretty sure somebody may have already said this but if you put bananas in the freezer and wait about 30 minutes and I'll go ahead and get it ripe that you need them

    So I tried this recipe and the banana bread was not too good it wasn't that sweet and banana flavor was just not there but I think it's because I used frozen riped bananas I did let them thaw out but just was not too good. Do you think it's because of the frozen bananas I used ?

      I’m so sorry. The frozen bananas themselves aren’t the problem but if they weren’t really ripe you’ll lose a lot of flavor there.

      That should work. Make sure to not overfill your pan and your bake time may vary slightly if your pan is a little different in size. 😊

    Hey Sam! I just created this recipe and oh my it was actually good for my first time making it! This is the same 15 but now 16 year old making the banana cake a while back from one of the videos on your channel, and I enjoyed it just like I did the cake. I actually ran out of brown sugar and had to head to Google to figure out what to replace it with, and I ended up replacing it with syrup 😅 but you know what it actually ended up tasting alright, hopefully I can recreate this recipe and actually use brown sugar the next time. I also have a question, is there anything you can do with leftover butter milk? It would be a shame to throw away but i just want to use it up. Thank you for your wonderful recipes again and I can't wait to bake some more!

    Absolutely LOVE the muffins version, but wondering why the bread recipe doesn’t also use the two temperature method?

      Hi Liza! I am so glad you enjoy the muffins! So I use two temperatures with the muffins because it helps give the muffins a nice lift, starting with that higher temperature and then dropping it helps the muffin batter rise and gives them a light fluffy body and nice high muffin tops. Banana bread is denser than muffins and we don’t need that same rise, so we can just cook it on one temperature here. I hope that helps explain it! 😊
