I have been making nankhatais for a long time, with varying results. I must say, Chef Iyer, after trying this recipe of yours, I have to throw away all the other instructions for making these scrumptious cookies. They were simply superb. Thank you for sharing this wonderful recipe with us with countless number of home cooks. Kudos. Keep up the good work.

Hello! For bulk making of nankhatai, is it possible to shape them all with nuts and everything and freeze up till baking? I have limited oven and fridge space. So can divide baking that way
Hello ma'am.. found ur channel today..watched 2-3 videos and subscribed it.. afterwards watching ur videos continuously.. I must say very detailed and informative videos.. great job.. keep it up 👍
Hi mam. I have been following ur videos and recipes for quite sometime now..so so grateful to u.. though i am still struggling with understanding my oven's temperature to get that perfect colour..be it cake or cookies.. But let me confess, your methods and eye to minute details, has helped me improve a lot. Still learning and i am sure will get there soon.. Just baked these nankhatais and added flavors and colours referring your diwali video. The taste and texture was melt in mouth💕💕💕 Kids loved it💕💕💕thank you from the bottom of my heart for it. I still need a little more hand-holding, hope you would get time someday to help me out.💕😌🤝
Thank you so much for the recipe! Can’t wait to try it! How long do these nankhatais stay and how best should I store them? Happy Diwali to you and Thanks in advance 😊🙏🏽

Sushama - my nanakhatai measurements are the same. But I cream ghee & powdered sugar first till light & fluffy..then I add the dry ingredients. Am I doing it right? My nankhatai tastes good..
Hi Nalini.. The process that you are following is known as "Creaming". When you cream the fat and sugar what you are doing is basically creating air pockets for the eggs and flour to sit. That is one way of making cookies. In that method there are chances that you accidentally incorporate too much air which causes the cookies to spread and lose its shape at times. The method that I have shared is known as "Reverse Creaming". In this method you basically coat the gluten in the flour with fat that way your cookie wont be chewy and stretchy. You can follow any method
Aww thank you dear.. glad you are liking all the recipes.. I actually conduct workshops for rasmalai cake so I wont be sharing it on UA-cam.. sorry about that
How we can make hallow inside the cookies.. from kid im eating those kind of nanakhati.. bt never get that texture when ever i tried to make khatai at home.. try so many recipes.. So pls tell me how to make a hollow from inside the khatais
@@fairym5307 ingredient list link is shared in the description box please check.. in that you can increase the number of cookies you want and it will calculate on its own
In your nankhati recipe no baking soda or baking powder is used just combine ingredients and set the balls and refrigerator for 20 minutes and bake at 190°c for 10 15 minutes right
I tried the recipe same measurements but I needed to add a little extra butter/ghee to make the soft dough where did I go wrong? And yes I added the extra ghee after kneading for 15 minutes with no result
