HLA B27 alone does not mean AS. There would something else apart from the report that must have prompted the rheumatologist to diagnose AS. Please discuss with your rheumatologist.

Could I still have the disease?

There is scientific evidence & studies for low starch diet but no studies with gluten free diet in AS. Difficult to tell you about gluten free diet in absence of studies.
