That's YT video compression, in game MetalFX is actually solid, make sure you use MetalFX Temporal (used in this video) and not Spatial. Spatial looks real bad.
Great question, in my case, since I was outputting and recording through a capture card, it was allowing me to choose 1080p due to the external monitor having a 16:9 aspect ratio. On the MacBook, since their monitors are 16:10 aspect ratio, usually 1920x1080p is not an option, just choose the nearest one.

what about Macbook pro? Air isn't really made for prolonged heavy loads, as it has no active cooling. Pro should handle it really well.
