How To Make Turkish Beetroot Dip (Kiz Güzeli)

    Thanks Henry. . . i made this yesterday and my landlady declared that it's the BEST dip of any description she has ever eaten. I did GENTLY fry the 1/2 tsp of powdered cumin in an extra virgin olive oil. I did add 3/4 tsp of rapadura sugar to one large tin of beetroot in the bowl (don't need much! as the beetroot is already sweetened) I did use a good 1/2 tsp of sweet hungarian paprika and a light 1/3 tsp of cayenne peopper which i also GENTLY fried with the cumin. I did add a sprinkile of CELTIC salt, and I did use a premium Greek yoghurt. All quaity ingredients and . . . the jUice of half a lemon - about 4 tsp of FRESH lemon juice. I added more yoghurt to taste to bring down the tang and colour just slightly and it was a BIG WINNER. Plenty of crushed garlic (3 cloves) aided by spinkling lightly with the Celtic salt before crushing those small medallions of garlic with a fork. Thank you so much. This will be passed on from father to son. It's HUGE. And look. . . it's really easy to make - all you batchelors out there. . . or even you married men (GASP!)

    Hi Henry I make a similar recipe but I add in the very beginning some olive oil. I personally find it better. Have you ever tried ?

    dear henry plz plz plz add the ingrindients in gr because every cup isnt the same i also find it very difficult for example with the Butter if u look around Google and foodblogs everybody says something different about the messurements so plz add that in ur recipes

    Is there such a thing as gluten free vegan kabobs that
    can be cooked on a skewer ?

      Hi Bruce, youll find that all vegetables are gluten free. Whenever it is requested at the restaurant, i skewer capsicums, tomatos, eggplant and even large mushrooms and grill them and baste with garlic and oil. The results are suprisingly fantastic

    Are the canned beetroots cured in salt or anything, or are they just in water?

      sjukfan generally they are just in water with a touch of salt

      Right. The ones in jars around here are pickled with vinegar and salt. I'll go with fresh ones instead.
