Try blending a bit of cottage cheese with an equivalent amount of dates, and then add cocoa powder to it. Add milk if you want a thinner consistency. It literally turns into the most rich, decadent chocolate pudding. I love adding whole almonds to it to add a bit of crunch which cuts through the thickness. To die for!!

I nevverrrr comment but I had everything in my kitchen and had to try...I though it was going to be weird but it 100% tastes like pumpkin pie, the only difference I would say is the creaminess because pie is made with cream but the taste is there, since the pumpkin has a stronger flavor you can't taste the cottage cheese at all...I even had walnuts 😁

Okay Im always skeptical of healthy versions of normal recipes. I made it for breakfast and wow. I saw some people say it tastes like pumpkin pie but it doesn't. It tastes like pumpkin cheesecake due to the cottage cheese. Took me at least 20 min to eat it because it is really filling and rich and I found that I would take a few bites, felt full, then a minute or two later I wanted more lol. I did 2 tbs of maple syrup and I would say that's perfect for like a lightly sweet breakfast but I do have a big sweet tooth. I could totally see making this into an actual no bake dessert by adding another Tbs of maple syrup and putting them into cookie/graham cracker crust lined muffin tin or springform pan, then letting it set in the fridge overnight. Definitely going to eat this regularly this fall since it's still really hot here in Oklahoma well into fall so a cool fall flavored breakfast is nice.
I absolutely adore cottage cheese. It goes with sweet & sour fruit like pineapple, berries, etc....I am a type 1 diabetic and it's one of the few foods my body can handle, without too much insulin.

Then as you do I will cut up the rest of the banana in “coins” and put it on top, maybe with some crushed pecans cause that is what I have on hand. Made this without blending it (out of laziness) and it was amazing! Definitely not pumpkin cheesecake, but definitely delish like pumpkin pie. Will definitely make again! Great high protein snack!

I love cottage cheese so Does my mom and sisters even my kids and nieces and nephews do! My favorite is cottage cheese with chives! It’s amazing but very hard to find… My boyfriend makes this stuff cottage cheese (cold), mushrooms (hot) and shredded cheese on top. With pepper it’s amazing. Most people don’t like cottage cheese cause they know what it’s made out of and have never actually tried it. I’ve had tons of People like that try it and now they love it!!! Gonna have to try this recipe!!

Old old farm recipe.. we had a family milk cow. Grandma made homemade cottage cheese We had fried potatoes frequently for supper Dad liked beaten cottage cheese with a good dash of real cream added. I would dip my fried potatoes in the cottage cheese. Yummy.

I felt the same way! I had a couple of spoons and had to put it in the fridge, it's so rich. Tastes good, though.
