Cooking Dinner in 1820s America - October

- A green soup seems fitting for my little cauldron. A delicious (and nutritious!) soup recipe from 200 years ago. A seasonal apple pudding made using American grown rice makes for a stomach warming fall meal. Did you know that rice used to be one of the top crops of the American South? This rice was usually called Carolina Rice. Still to this day there are over 5,000 rice farms in the U.S. producing over 20 billion pounds of rice annually!

What better thing is there to cook in a cauldron than neon green soup💀? Thank you all for joining me on this chilly October day. Be sure to investigate the original recipes (or receipts as they used to be called) at the end of the video. Below you will find these early 1800s recipes translated into modern instructions for those fellow witches who wish to conjure up their own soup at home.
"To Stew Old Peas," 1823
1 cup of dried split peas
2 cups of water for overnight soaking + more for cooking
1 teaspoon of black pepper
Smoked ham hocks, however much you can afford
Soak the split peas in a large bowl overnight by pouring 2 cups of water over them. In the morning you will see that they have swollen and have doubled in size. On the bottom of a pot put in your ham hocks. Over this pour the soaked peas, pepper & however much water will just cover them. Bring to a boil uncovered. Reduce your heat to a simmer, cover and cook for 1 hour. Once done tear the ham hock apart with 2 forks or for the more period correct way serve a large chunk of it in the bowl with your stewed peas. This tastes excellent with a side of bread.
"A Carolina Rice Pudding," 1805
0.5 cups of rice
2 cups of whole milk
0.25 cups of sugar
3 apples
2 egg yolks
1 teaspoon of cinnamon
The zest from 1 lemon
A pinch of nutmeg
Pudding Sauce:
1/4 cup of butter
1 tablespoon of sugar
White wine, a dash
Water for boiling
Wash your rice well in water. Transfer the rice into a pot and cover with milk. Simmer for half an hour, or until the rice is thick and soft. Do not worry about the rice being fluffy. This is a pudding after all. Once soft, remove the rice from your heat and set aside to cool. Chop your apples small and throw them into the pot with your cooled rice along with egg yolks, cinnamon, lemon zest, nutmeg and sugar. Stir well to combine. Dunk a pudding cloth (or 2, if you have them and can double up which is even better) into boiling water for a few seconds. Remove and lay out flat on your work surface. Spread a thick layer of flour in the center of the cloth. Pour the rice mixture over the flour and roll up the cloth into a ball. Tie off and carefully submerge into boiling water. Boil for 1.25 hours. In the meantime, prepare a pudding sauce by combing sugar, butter and wine in a skillet. Cook on low heat for 10 minutes, stirring frequently. Once the pudding is done boiling carefully remove it from the cloth. Pour the pudding sauce over it.
What is a pudding cloth? 😅no laughing 😂. I know of cheese cloths I use to make butter and cheese? Just never heard of pudding cloths before again no laughing 😅.
@@shelliebancroft4145 I'm glad you asked. I don't know either. It kinda looked like a tea towel.
@@shelliebancroft4145pudding cloth has a tighter weave than cheese cloth. Muslin fabric towels were common. If you can't find muslin or 100% cotton that is food safe (dye free) multiple layers of cheesecloth will work.
A pudding cloth is much like any cloth. Cotton certain weave. Do some research. I'm sure you can find your answer.
I would like to know, it was in a cloth to a jello mold. Did I miss it?
I can't tell you this video relaxed me. First time here and the sounds of the chickens and her just working in the kitchen calmed me. Our world is too noisy. Many thanks!!!!
Welcome. These videos get me through many anxiety attacks. Gog bless you and yours.
It really is nice visiting the old days this way. We probably wouldn’t like all of the living like that, but parts are really cool! Check out the one where they dress up for the wedding! They talk quietly, but it’s cool seeing how it probably worked.
You should also checkout wilderness cooking. Both great channels for this.
@@jrose353 That sounds great . God bless you and yours.
@@tonyascarlett2413I also suffer from anxiety and panic disorders, and I find there videos so calming.
I'm also fascinated by the different ways in which the fireplace is use for cooking, with the different cooking vessels specifically for boiling and simmering, frying/sauteing, and even baking.
I love these videos. It feels so homey. And keep that rice water you washed the rice with to use for your hair. It's supposed to help you with breakages and keep you from shedding as much!
Also great as facial toning water
That is really interesting, I didn’t know that. Love learning new things.🫶🫶🫶
Wow, I gotta try that.
I've seen people soak cloth in rice water and put it on their face like face mask 😊 not sure what the benefits are but I heard that rice water is used in many facial products
I pour my cooled rice water on my house plants and flower borders. My house plants love ricewater.
Cutest nosy chickens ever!❤
I have many troubles. Mostly financial and heart break. But when I watch your videos, my troubles melt away and I have peace. Thank you so much! 🥰
Hi Justine this recipe took me back to my childhood, my mum used to make pea and ham soup, she would boil the ham for a couple of hours, maybe more, and then take it out to cool, then she would cook the peas in the ham water, when they were cooked she would cut up some of the ham and add it to the soup mixture, it was delicious, this reminded me of that very much, we would have it with crusty bread, it was such a filling meal, happy days, thanks Justine love these videos, bye from UK xxx
Do you remember the "pea and ham... fae a chicken" stock cube adverts? 😂 That might just have been in 🏴 right enough.
Sounds delicious! We do any kind of dried bean the same way. So nice on a chilly day! And good for you!
I love a good pea and ham soup
The chickens looking in was so funny.
Loved the chickens in the window, they were seeing if you had more apples! Looks like a delicious meal. Happy fall! 🍃 🍂 🍁
That beautiful rooster jumped up after the hen, like, what’s up there, woman? Move over!😂🐓
This young lady is very knowledgeable. I enjoy all her videos. Thank you!
Justine, you always look so happy and content when you’re cooking. I love watching you 💜
Split pea soup is one of our favorite comfort foods when winter's chill is in the air. The Carolina rice pudding would be a unique dessert for Thanksgiving. It would provide some welcome variety among the more common desserts.
YES 🙌🏻 😇🧡
Now look I know a Lil about old time cooking . And not even that old !? But the ingredients that beautiful young lady uses? Lemon zest, nutmeg, etc were very hard to come by !! They were Rich ! : )
The girls seem so happy! Ron is lucky to have you in his life, otherwise he would be doomed to eating grilled squirrels and taters for life!
You always make me wish you would ask me over for dinner😁😂🤗
Your rooster looks like my rooster “foghorn.” He’s the sweetest most polite rooster. And your black cat looks like my cat “doom.” They’re both the best boys. I’ve never done apple rice pudding but I’d like to try it next apple season. My yearly tradition with my homegrown apples is to thickly slice them and sprinkle with cinnamon and eat in a sandwich on toasted bread with peanut butter. It’s like the freshest pb&j you’ve ever had.
The apple rice pudding looks absolutely delicious! And not too are hard to make! I’m sure you both loved the peas also
Happy Halloween 👻 🎃👻🎃🧙🧙
Happy Halloween! 👻 🎃👻🎃
@@EarlyAmericangirlfriend ~ your green pumpkin is badass!✨🤘🏽✨ thanks for another great vid✨🧡🎃🧡✨fantastic Halloween you two 🧡🧡🧡🧡
I really liked the apples instead of raisins-not a fan of them, I bet that is good! Might have to roll up my sleeves and give it a try!
Those shoes look so cute, soft and bendable. They look very comfortable. I want those too.
Happy Halloween!🕸🎃🕸 The cabin looks so perfect and the food looks great. Can't wait to see the Chew and Chat in a bit. Be blessed, Justine and Ron! xoxo

That dinner looks so good especially the green peas with ham hocks in it😊 truly delightful indeed...thx for sharing... smiles
You should put ASMR in the title of these videos because that’s how relaxing they are.
No. Perfect as they are. Change nothing please please please. This is why this couple is so outstanding
I love watching the chickens!
Nice Trick, handing Ron the stewed peas when he really wanted the Treat of the rice pudding! Happy Halloween! 🧛♂🎃👻

I'll be over in a few minutes for supper😂😂 Dang, that all looks so delicious.

I like that you show how to use the coals instead of just over a flame. Thank you!
Hello Early American,
Time when you upload is when I feel very hungry. ❤
What a coincidence?
Awesome
That combination of the rice pudding and apple was so interesting! I loved the chickens jumping up to the pumpkin and peeking in the window. 💜

@@EarlyAmerican Thank you, Justine! 😃
I would never leave that kitchen except to watch the chickens. So peaceful. I think they ate better in those days than we do now.
I am so happy to see the chickens are doing well...i hope no one will bother them no more like before. The Chickens surely know how great cook is Justine.....They can smell in a mile. The stewed peas reminds me of pinto bean with ham hock. So Yummy !!!! Ron is so funny standing behind you...yeah he wants it too. HAPPY HALLOWEEN TO ALL 👻👻👻👻👻👻👻
I loved seeing the chickens. Thanks, Justine! 😊
You had me at the ham hock!! Love that in any kind of soup! And I really like watching the October and November and December shows! And I’m sure it’s a bit more comfortable on you two cooking in that small cabin!!
Absolutely Love These Recipes❤🎉❤🎉❤🎉❤
I truly enjoy the content! Thank you for taking the time and effort to present such qaulity!
I love to watch Justine cook and then Ron and her eating on Frontier Patriot while I'm eating. I feel like I'm there eating with them , then this TV dinner doesn't taste so bad.
Love your outfit today❤so cute
Here in the Netherlands pea soup is one of the most delicious winter dishes! Love it!
Just lovely. I love your dress and shawl and beautiful warm socks. That pudding looks 😍
The pudding looks amazing. Is a pudding cloth the same as cheese cloth?
The meal looks great. Thank you, Justine, for the recipe.
Love to see your hens and roosters. They are beautiful.
Justine! Have Ron build you some type of wood frame and add soft padding for where you sit and cook! That way it’s not too hard on the body!!! Love you videos!!! I have made several and they are absolutely delicious!!!!!! PLEASE DONT STOP MAKING ALL THESE VIDEOS!!! they are so pure and genuine and such a nice break from all that crap on the internet- I only watch certain things and your on my top list! lol
I love this channel. Your chickens look so beautiful & healthy btw🫶🏼
For the majority of my childhood, my family and I grew up pretty poor. We had 7 of us altogether. Pea soup was a staple in our household because it was cheap and my mom could stretch it and make it last for many meals! Plus it is so filling and rich with the ham hock and my mom always made her stock from scratch. I loved it as a kid and still love it as an adult! One of my favorite comfort foods ❤️ your videos are so cozy and wholesome, thank you for sharing!
Thank you ever so much for this channel. These cooking videos help lessen stress of the day, at least a little bit. Every little bit helps. I love these, and I wish I had an off-grid cabin with a fireplace and hearth so I could use a fire to cook meals.
Thank you Justin and Ron for these wonderful weekly videos 💕💕🙏🏼🙏🏼
Looks absolutely fabulous!! Way to go, Justine!! Blessings.
Beautiful video , this is one of my favorite channel 👏👏👏👏🌹🌹🌹♥️♥️
You make everything look delicious & easy 😅😊🫛🍎🍖
❤ These! I am Celiac, and continue to research how old time cooks did it. Great job!
HAPPY HALLOWEEN! 🎃👻🎃👻🎃 Loved the chickens beggin’ at the window 😂 Mish Mish looked absolutely adorable in the pic with his little bow tie on in the community post! Have an awesome and “spooky” night! See ya next time 👋😊🇺🇸❤🇺🇸❤🇺🇸❤
Oh! We get an early video today! Best Halloween treat ever! :)
Happy Halloween 🎃👻 I am a fan of todays puddings but I think I will make some modern apple rice pudding since I have apples and rice. Love your cooking videos! 👍👍
I guess I’m old fashioned but I still say breakfast, dinner, and supper. So I like to see the meal called supper. And what a meal! Yum!
I Love watching you Cook.
You look So Serious, and then when I watch CHEW AND CHAT, you let loose.
I just Love You Two.
Yours and Ron's videos are the best on UA-cam. Your pudding looks so good.
Just found your channel. I’ve been missing out all this time! Love it!
I love your dress. Very Fall looking, and warm with the shawl. The rice pudding sounds delicious. I am going to have to try that one. I also got such a kick out of seeing the chickens peeking through the window.
Love love love you two! I get such relaxation watching you. Please hold your knife tips to the cutting board to get more control, fewer accidents and better uniformity. Keep these videos coming; i live vicariously through you
Wooo! I made the Carolina Rice Apple Pudding......an entirely different taste and just WOW!
I so love your videos. Thank you so much.❤
Can't wait for another holiday special
They both look delicious. I love the apples instead of raisins like my uncle added. Rice pudding was his favorite thing to make. I loved it but I bet with apples its divine.
Marvelous cauldron and a great outfit you are wearing. I envy you both.
These remind me of how I tell people recipes. They’re short and to the point. I know there are some people who “can’t cook” but I just can’t write out step by step instructions. You get a paragraph lol
Thank you for sharing your video. I really enjoyed it.👍❤️
I love this dress. Also, I don’t know if anyone else has commented on this, but Justine seems to have an extra wide smile over the last couple of months. One might even say, glowing. I’m sure I don’t know why.
Oh my gosh pea and ham soup! I’ve never seen it anywhere else than my family I’m so happy to know we’re not the only ones
As a owner caretaker of five cats, six chickens, a horse, a dog and a family. I love the socks love love love so super cute.
I've never tried it , but it looks delicious !! Ron's a lucky man ! To be getting married to a fantastic cook !! Hope you both have a wonderful day !!!
Your chickens are so adorable. So funny watching them at the wood pile and window. 😂
Watching the video makes me hungry 😍 Like the movie "Little House on the Prairie" on TV 😊
Chickens in the window were so funny. Apple rice pudding looked very good!
Dried peas and ham hock...so delicious. I love dried peas and cook them year-round. And your chickens have personality...too cute.
That pudding looks yummy! Great job Justine. I loved how Ron tapped your shoulder and you tried to give him the soup! 😆 He wasn't having it!😂 Thank you for your wonderful video!
We just love these videos and thank you .
I love all the cook ware you have, very cool.
The chickens staring in the window made my day. 😅 I hope to see you at Fort de Chatres.
I love you chickens!
You have some new pots I haven’t seen you use. The pudding mix was a nice combination. Went well with the soup.
It's all sounds so good. I too like stewed peas and rice pudding. Got to try this pudding recipe, I'm sure I'll love it 😊
Justine always amazes me how she prepares perfect dishes without exact measurements or exact heat temperatures! I’m sure I would burn everything lol.
I love these videos. So calming. I did wonder about whisks. Now I know what they used. The only part missing....kids getting underfoot...lol!
I am really enjoying your videos, thank you for posting some peaceful content. On a side note, I always thought that you couldn't cook anything acidic, like milk and apples in a copper pot. That is why they were lined with silver, so that the copper didn't leech into the food. I could be wrong though. I wonder if anyone even has the skills to re-line copper pots? Cheers, and thanks again.
I love pea soup . It’s one of my favorite meals.
