Chocolate San Sebastian (Basque) cheesecake | Easier than you think!

  • Hey! Today we will make chocolate San Sebastian (Basque) cheesecake.
    Ingredients (for a 19-20 cm pan):
    350 ml of cream (33% fat).
    500 g of cream cheese.
    150 g of sugar.
    15 g of cornstarch.
    3 eggs.
    30 g of cocoa powder.
    Mix sugar and cream cheese with a spatula.
    Add 3 eggs and cream.
    Mix with a whisk until no lumps remain.
    Add cornstarch and cocoa, mix everything well with a whisk.
    Line the form with paper and pour in the dough.
    Tap a little so that it settles evenly inside.
    Bake in the “top-bottom” mode at 230°C (450°F) for 30-32 min.
    Cool the cheesecake. Refrigerate for 5-7 hours or overnight.
    Ready!
