  • The words are simply not enough to describe what a chocolate soufflé tastes like. This is a flourless souffle, incredible light, chocolaty and simply divine. Definitely a must for chocolate lovers.

    Ingredients
    2 tbsp (30ml) milk
    1 tbsp (15g) cream
    5 tbsp (75g) sugar
    2 oz (60g) 55-70% dark chocolate
    2 egg yolks
    3 egg whites
    1/4 tsp (2g) salt
    1/4 cup (30g) unsweetened cocoa powder, good quality
    3 tbsp (45ml) water
    Powdered sugar for dusting
    Butter and granulated sugar for coating the ramekins
    Topping (optional)
    7 oz (200ml) whipping cream
    1 tbsp (7g) powdered sugar
    1. Preheat oven to 375° (190C). Butter the inside of your soufflé molds ( I used 3 1/2 Inch- 9 cm Ramekins). Dust the molds with granulated sugar, then pour out the excess.
    2. Place milk and cream in a small saucepan and stir over medium heat until it boils. Remove from heat, add chocolate. Let sit for 1 minute then stir until well combined and all of the chocolate has melted.
    3. Add the cocoa powder and water and whisk until very hot over bain marie (double boiler).
    4. Remove from the heat and set aside to cool for few minutes.
    5. Meanwhile whip the egg whites with salt until foamy. Gradually add sugar and beat until stiff peaks form.
    6. Add egg yolks to chocolate mixture and whisk in to combine.
    7. Using a rubber spatula gently mix one-third of the egg whites into chocolate mixture. Then fold the chocolate mixture into the remaining whites. Spoon batter into prepared molds.
    8. Bake until the soufflé has risen to about 1 1/2 inch above the dish, for about 13-15 minutes.
    9. Meanwhile whip the cream with powdered sugar if used for serving.
    10. Remove from the oven and dust the top with powdered sugar and add a spoon of whipped cream. Serve immediately as the soufflé will begin to deflate after in 2 minutes.

    I have been making perfect Orange Souffle for over 40 years. I even have the French copper whisking bowl. I thought I would try a choc Souffle again after 3 failures over the last 10 years. It’s disappointing when you serve up a chocolate pudding for visitors.With Utube and 100s of recipes to choose from, I decided a 4th attempt was to be made and challenged myself.
    I tried this recipe, after seeing 1.2 million views, and did exactly as in the video. I made it for 6 people and doubled the ingredients. It worked 100%. WOW. Thanks so much for sharing. I even put my copper bowl away and used electric beaters. My father would turn in his grave. He bought me a copper whisking bowl from France for my 21st, I am now 61. The Souffle rose out of the remikins 25mm. I finallly did it. 4th time lucky, I received a round of applause from my 4 dinner guests.
    Thank you. I’m up again doing it 3 weeks later. BUT, doing one large dish. Hoping for the same result. I believe it’s harder for the mix to rise in one large Souffle dish. FINGERS CROSSED. TO BE ADVISED.

      I am so glad you succeeded with this recipe of soufflé..never tried a larger one ..should definitely work ..might need more time in the oven for best results ..let me know ..you made me very curious

    i just did this for the first time and it came out great! ive never actually had a souffle before so i can’t compare to what it’s actual flavor or texture is supposed to look like but it rose very nicely and there were no cracks!

    Hi all, I made this again last night for 6 people and doubled the ingredients. I used ONE large Souffle dish, (2 litre), buttered and sugared. I always fill the little ramikens to the top, so I did the same here. Cooked it for 30 minutes, then checked it and turned it around, and placed foil on the top. Cooked another 5 minutes.. After 35 minutes I checked it with a skewer, and it was ready. It was over the edge by 25mm, I served it up with the cream. The Souffle top in a large bowl does promote cracking. So the icing sugar is the make up here. It’s more spectacular it a large dish when it rises, less to butter and sugar, all personal choice, and easier to put one large dish on the table and serve it up to your drooling guests. Serving up 8-10 HOT ramikens is hard work as the are small little dishes, you must be 100% sober, as usually at this stage several glasses of Moët have been consumed. I also find getting 10 ramikens out of a hot oven difficult.
    I am very happy putting my French copper whisking bowl away, and using the electric beaters. There is no egg white loss on the floor now from my hand wayward whisking. It is hard work by hand, and age has caught up with me, Hahaha. I have to go with the modern times. Great recipe, thanks so much.

    Just whisk egg whites until white and fluffy than add nutella or whatever you have (2 egg whites, 2 tablespoons nutella) mix well, put it in ramekins and put them in hot water in a pan boil for 10mins and voila you got soufflés
