Using Italian Dressing as a Fajita Marinade?! (My Award Winning & Secret Carne Asada Recipe)

THE ITALIAN DRESSING MARINADE:
Start by adding 3 tbsp of white vinegar for some twang and follow that up by adding two cups of water. I like to use distilled or bottled water for best results.
Next add half a cup of olive oil. I’m using GRAZA - which is olive oil that is actually made from olives grown in Italy. This is an Italian Dressing afterall.
After that add the juice of two lemons and follow that up with grinding up half a teaspoon of anatto seeds - aka achiote - in a molcajete and add that to the marinade.
Then take half a cup of fresh papaya, mash it up too and add it to the marinade.
And we’re not done yet - for the powders I’m using 3 tsp of sugar to balance out the salt we are going to be adding, and following that up with 2 tsp of salt, 1 tbsp black pepper and 2 tbsp of WOW! Seasonings - this was a seasoning I developed for fajitas and steaks in the first place!
And for the final set of ingredients, I added in a sprig of fresh rosemary, 2 cloves of chopped garlic, half a diced onion and half a diced red bell pepper.
Cover this up and let it marinade overnight then on to the grill we go!

My Pop Who was a chef at the Adolphus hotel in Dallas was using Italian dressing marinade for his fajitas back in the late 60’s after eating people couldn’t believe that he had used Italian dressing because it was so good

That makes sense. It has most of the right seasonings already built in and is acidic, so it tenderises the steak.
True but it has soo much damn bad oil in it. If you care for the health you’d stay away from that product. It’s really no different than taking a swig of the oil you fry stuff in.

Good on ribeyes, too, believe it or not. 2 to 1 lite italian dressing and soy sauce. Marinate for 8 hrs. Really good.
Italian dressing has been my go to marinade for most of my life. I learned it from some Filipino people back in the early 90s. It's even better on pork than it is on beef.
Been using this for years on everything. If you need a quick marinade it's the go to. However its like cilantro, people either love it or hate there is no in between.
Here’s something I learned from a Mexican restaurant, when I used to live in California. Make a margarita… use it as a marinade. Delicious fajitas!

I have done grilled shrimp skewers that were marinaded in italian dressing and kickin' chicken seasoning. They were delicious! Gonna have to try this on some skirt steak one of these days...

I watch a lot of people cook on youtube, but I never end up doing it myself. I’m 100% gonna try this one though, super tender is what I’m after since I grew up a vegetarian and I’m not super used to the chew meat comes with.

I've used multiple Italian dressings as marinades. The Olive Garden dressing does a good job as well. If you're not going to add your own seasoning... go for the dressing with the highest sodium content.

Love fajitas, and all of these look great! We've been using Italian dressing for decades, but not the pre-fab bottles. Try Good Seasons Italian mix, and use avacado or EVOO. Particularly with EVOO, it does congeal during refrigeration , so need to get it out of the fridge for an hour or so before you plan to use it again. We Love your style Brother.

We used to do that sometimes out on the ranch grilling in south Texas. One bottle and some tortillas and good to go.

This is an old trick. Also works as a great marinade for kebabs. Soaks into the beef, mushrooms, calabazin, and veggies. Works well for chicken, too.

Can’t go wrong with good fajitas. I’ve been buying some pre marinated ones from Costco lately and they’re some of the best I’ve had and I typically don’t like pre marinated meat. Your marinade looks awesome, but would you say the $20 marinade + time is worth it vs simple Italian dressing?

At the dawn of the “fajita competition movement” Adolph and Charlie Alcala won best fajita in the Valley competitions with damn best this recipe (which I released in 2012 on my UA-cam station) in years 1976, 77 and 78. They are from Galveston Island.
Italian dressing used as a marinade is definitely an old school south Texas thing!
I wonder if it would make a difference in the strength + smoothness of flavor in your marinade if you would mix all your marinade ingredients together, let them integrate into one another overnight in the fridge (or even leave them out on your counter for awhile) THEN add your meat the NEXT day + marinade it for 24 hours?

Italian dressing works very well as a pork chop marinade.
I grew up with a Sicilian influenced from mgrand mother and marriage into a Sicilian family. Im burn out on the Italian dressing flavor. Still good stuff. Its comfort food for me. I like Texmex sometime.
