Great project, and video/editing! Others have suggested a wood threshold, but if you want to keep it carpeted, I can't tell from the video, but it looks pretty similar in both rooms. I would steal a piece from an out-of-the-way corner of the closet, back where the ceiling is the shortest, and using a couple strips of iron-on carpet tape and a scrap of padding, blend it in. If needed, a runner-type rug running throught he doorway would hide any inconsistencies.

I could tell they weren’t run on the right towards exterior wall because there’s no electricity there, so I knew they had to be coming from the left. When I cut into the drywall on that side I was super careful to only go as deep as the drywall thickness so I didn’t nick a wire!

A marble or tile threshold might look nice.
I'd put laminate flooring throughout the closet but that's just me. You could put a wooden threshold in.

if you are putting any built ins in that closet, you can cut a piece of the carpet from that area and patch it.
Try patching the floor by using a piece of wood threshold.

Maybe you don't want carpet in the closet. So you could cover the exposed gap with whatever flooring you choose for the closet.
If you have a closet within the same carpet in it, you could steal a piece from the back of it and patch it in.
Just make a wood trim threshold.

I get it on the drywall side but the lathe and plaster it would’ve helped. I realize you are featuring a product. 😉
