They're not really built for racing, so in the interest of not needing to run extensive maintenance on these aircraft they limit how fast they go. It's mainly for the engines but also for the airframe as well. They want to preserve these aircraft as long as possible because they are keeping them for the history, and keeping them pristine requires them to not push them to the level they may have been pushed during wartime. They might do that maybe once or twice, but every time they do, they go over every inch of the plane afterwards to make sure nothing happened.
