Hot & Sour Soup Recipe:
1/2 cup dried shiitake mushrooms
Hydrate 10 minute with warm water. Reserve
1/4 cup of the juice
add the juice to 2 tbsp cornstarch and mix until dissolved. Set aside
In a pot add
1 tsp Sesame Oil
let it heat up, add 1 tsp grated ginger
1 clove minced garlic. Cook a minute
add 1/2 cup baby portobello mushrooms, sliced
1/4 cup seasoned baked tofu, sliced
1/4 cup sliced bamboo shoots.
Stir and sautee 2 min
Hydrated shiitake mushrooms
add
4 cups chicken broth. Bring to a boil while stirring, turn down to simmer for 10-12 min until mushrooms are cooked.
season with
1 tbsp soy sauce
1 tsp kosher salt
2 tbsp rice wine vinegar
1 tsp chili garlic paste
mix and add cornstarch slurry. Bring back to a boil to thicken
while mixing add 1 raw, scrambled egg. Mix into egg ribbons.
serve and garnish with sliced green onions and white or black pepper powder.

For those who are wondering and this is coming from a local hong kong guy, the soup isn't what we usually have at home but its considered a kind of street food! usually its thicker but its up to preference really! You're free to add chicken into it too! the white pepper powder is actually used to get rid of that raw mushroom flavor that a lot of mushrooms tend to have! Put a couple slices of ginger to round out the taste and makes it heartier for winter! Although we don't cook with sesame oil, the reason being it burning easily as well as it causing health issues when cooked at high heat, sesame oil is generally used as seasoning or garnishing towards the end of a lotta chinese dishes! great job!

it brought back so many memories. I used a bit more chili paste but maybe the one you used is hotter, and like you I like sour. I didn't have bamboo shoots at home so I used bean sprouts instead and it worked as well, and didn't find seasoned tofu, so I bout smoked. I am in love! SO so simple, yet so tasty and comforting. Isn't this traditionally made with black fungus/wood ear mushrooms? I think I like shiitake better. Though I saw some fresh black fungus at the market and I think it'd go good here.
Always have this as an appetizer/side dish kinda thing when I'm eating out but at home I think it's gonna be the whole meal because I'm lazy. Tofu and egg is enough protein for me. Loved when you added the egg. Just bootiful!

This is my dessert island food....actually, I could probably live on this soup no matter where I am. I make it often for my family with a quick fried rice to go along side.
I always make it vegetarian because it tastes just as good and is easier not having to mess with silkening a meat. I like seasoned tofu as well, but if all I have is soft I just scramble it in its package to save another cutting step. I also like to add a bit of shredded carrot to my soup for color. Yum.

Actually, the main hot flavour should comes from white pepper powder instead of chilli paste you used. And we often drizzle sesame oil at the end of cooking process. This soup is a traditional Chinese soup, especially in Shanghai. Every Mum can make this soup at home. Anyway, your soup is awesome! Almost same as my mum cooked for me.

love the hot sour soup at our local Chinese/Japanes place...im pretty sure they dont use any meats and thats how i would want it. ive been looking at a ton of videos on this soup and im going to have to break down and try to make it.Sux i have no asian stores anywhere near me though.
