    This dish was a favorite at my parents’ old restaurant, and it’s often found on most Chinese takeout menus.
    As popular as hot and sour soup is, interestingly, this wasn’t something my parents ate growing up in Guangzhou. As with a lot of Chinese dishes, the origin (or origins), are hard to pinpoint, but it’s likely further north where the weather is colder and the flavors are more heat-inducing.

    Regardless of where the dish came from, it’s a perfect soup for a cold winter day that’s equal parts spicy and soothing.

      My dad worked as chef in the UK when he first emigrated here, and later opened his own takeaway. I'm in my 50s now but when i watched this video (my 1st with daddy lau) i am transported back to being a young girl leaning to cook with my father who is no longer with us 😢💗. Thank you so much for showing me how to make my favourite soup, and for the memory. Treasure your parents they are beautiful 💗💙🥰

    I am an African American woman from the Bronx, NY. When I was growing up my Mother would take us to Chinatown in Manhattan and we would often go to little restaurants where no one spoke any English and we of course spoke no Chinese. She would point to dishes which other patrons were eating that she thought looked interesting and order. This is how I came to first try hot and sour, and spinach and bean curd soups which I love to this day. While I often make the hot and sour soup, I’ve never found a spinach and bean curd recipe that was just right. Do you think you’re lovely Dad could make that for us? Love your channel.

      This is a terrific story. Not too long ago, (I’m on my late thirties), I was going to grad school in Philadelphia. As some of you may know, many people of diverse backgrounds-not just Chinese-would go to that section of Philadelphia for some late night Chinese food.
      I recall several nights fondly of taking the PATCO from Camden, NJ passing Rutgers. Yes: I’m order for me to get good Chinese food, I had to engage in interstate travel, lol.
      Since I’m Chinese I would order all sorts of dishes most non-Chinese wouldn’t think of or even be able to identify. I made many friends and broke much bread (or…rice??) by introducing new meals and flavors. Much tea was drunk and much mess (around the table-good food deserves to be eaten with company) was made. I guess it’s the Chinese version of “if it doesn’t get all over the place, it doesn’t belong in your face.”
      One friend of mine-African American and from Alabama-recently reached out to me and said “Thank God new Chinese restaurants have been opening up downtown.” Frankly, it wouldn’t surprise me if he started learning Chinese just so he could learn to order the black bean clams, haha….

      There's a Korean restaurant in my town that is amazing, I love the fact the the menu is in Korean, with English subtitles. The food is served with traditional ban chan, and some of the food is so spicy, it would make the Devil sweat! I love it!

    My husband is Muslim, now, is Ramadam and I made him this soup to break his fast. OMG! It was delicious, very balanced flavors. Ordering Chinese food is definitely over, and he explains it so well and is so endearing. God grant you have parents for much longer. Grandparents and parents are the jing-jang in raising a child.     Wow I learned so much from this video, especially the timing for when to add the white pepper and the vinegar. I have had the problem with white pepper clumping because I usually add it at the end... now I know what not to do! It is those small tips that make his videos so helpful even to those of us who have made this soup before. Thank you! I always learn something new from Daddy Lau!

      Courtney: a little trick, should you ever find yourself needing to add white pepper (or any other powdered spice that tends to clump when added into hot, thick liquids): mix it with some liquid first.
      Similarly, for western dishes thickened with flour, to add more flour (which you can’t add to hot liquids because it’ll clump, nor mixed with water because you make dumplings), mix it with butter or oil first. (Flour and butter, 1:1 ratio, is called beurre manié, and it’s a freaking godsend when fixing gravies, for example.) The fat keeps the flour granules separate so they can’t clump up.

    Absolutely wonderful! Your dad's advice regarding adding the white pepper before the thickening agent, and the vinegar added at the end so it doesn't boil off, are exactly the nuances I've been looking for!! Thanks for documenting these recipes, I really appreciate it.

    I really appreciate how your dad uses all fresh ingredients (except for the dried mushrooms)! I found a lot of recipes calling for packaged or preserved things to make it more like the restaurant version. Your version is so fresh and full of variety, it turned out so good. Thank you!

    I remember my parents calling this "Sweet and Sour Soup" in order to get my brother and I to eat it at the restaurant, because they worried about us getting scared if they said "Hot and Sour." It's awesome to hear your Mom doing the same thing :)

    Thanks for the great video! Perfect instructions and Daddy Lau is a fantastic cook and instructor. I love this soup so much. I made it today and it was perfect. I also love that you didn’t use bamboo shoots. The carrots had the same texture as the bamboo shoots without having that funky flavor. Keep up the good work. He talks exactly like my dad and my family is from Hong Kong.

      Karen: They are not called "red" peppercorns, they are called sold as "pink" peppercorns. Pink peppercorns are not a true peppercorn (genus _Piper_ ). Since they are the same shape and size as true peppercorns, they are marketed under the name “pink peppercorn.” Not peppercorns at all, they are ripe berries of different plants depending on where they are being sourced: _Schinus terebinthifolius_ (Brazilian peppertree), _Schinus molle_, (Peruvian pepper tree), and _Euonymus phellomanus_ (Spindle tree with is actually a shrub).

      Hey!! My dad made your beef and noodles recipe a while back, and it was delicious! I helped him, but we accidentally over stirred the beef and a lot of it fell apart and thickened the soup lol. Was still great though, and we added extra pepper, similar to a hot and sour soup!

    I made this tonight for my family and doubled the recipe. It was so delicious. I always thought that the tree fungus was seaweed in restaurants.Funny to know that so many mushrooms go into it. Super healthy.I love the vegetarian recipes.

    One thing I've learned from another chef who used to be the presidential chef in Taiwan is to starch the soup first before adding tofu. This is to help preventing the tofu from breaking when it'd being cooked if you cut it thin or using a softer (silken) tofu. Then you add the egg. Vinegar is always last as it will dilute the starch slurry and prevent egg from forming clumps.

    Wow, i think this is the first Chinese recipe for hot and sour soup I've seen that doesn't really require a trip to the chinese grocery store for specific ingredients.
    I have my own recipe I like, but I think I'll give Daddy Lau's a try because this is way easier than mine.
    I've recently found your channel, and i can't believe you have as few subscribers as you do. The conversations you have with your parents about the dishes, their restaurant, and what life was like in China in the old days are interesting and really special. I hope you plan to keep having them on your channel.

I already follow some Chinese cooking channels (I see you guys have talked with Chinese Cooking Demystified - if you haven't made friends with Mandy at Souped Up Recipes, she's amazing as well). I like Chinese food and want to see dishes cooked by actual Chinese people rather than some famous chef, you know? The chicken congee video popped into my recommended videos last week and I went down a rabbit hole. Always interested in mom and dad food. It's the best. 😊

      @@MadeWithLau I'm mostly good with family mealtime, but if you press me - this isn't where your family is from but the pandemic has made me miss Sichuan food. It's inaccessible to me locally and I can't justify driving nearly 80 miles for takeout. I'm not sure what the Chinese name for it is, but my Sichuan restaurant has this mashed white yams with a blueberry sauce that was amazing with all the spicy food we ate. Amazing palate cleanser and was really good at taking the heat out of your mouth if things got too spicy.
