  • This chilaquiles breakfast casserole is made with layered tortilla chips, baked in a red chili sauce with lots of melty cheese. Topped with fried or poached eggs, and plenty of delicious fixings, and it makes for a very satisfying meal. Traditional chilaquiles are made in a skillet, but this casserole version is a great way to serve a large group at breakfast or a brunch. Enjoy!

      I love chilly killies! Now, I know why the Mexican guy at my taco place shakes his head "no" when I try to speak Spanish. He claims he doesn't speak English, but clearly, that's his preferred method. For me.

      The pronunciation is nowhere near as bad as the recipe. I guarantee there's no way in hell this monstrosity tastes anything like actual chilaquiles.

      I agree! There's another channel that I loved called Spain on a Fork and his recipes are delicious too, but I believe all are vegetarian, which I'm good with :) Chef John's biscotti recipe is something I use often.

    I do wonder if you covered the casserole after adding the eggs, if it would have streamed all the eggs to an even doneness. Great looking recipe, I'll need to try it soon.

    I have made something similar but with a mixture of avocado salsa and salsa verde and shredded chicken. Great for an easy meal.

    My first chiliquiles was in Mexico, for breakfast, and it was chilaquiles con pollo. Chips, sauce, cheese, chicken, and egg - but the egg was scrambled if I remember correctly. So delicious. It was many years ago, when chiliquiles were pretty much unheard of here. Very memorable.

    Very nice, thank you Chef John. I love recipes that one can customize to his/her own local and favorite ingredients. If you have never add Hatch chilies to your eggs before scrambling them then you are really missing out on something special.

    This recipe reminds me of migas that I had at a restaurant - it was cooked like a casserole, instead of on a stovetop, & reminded me of a strata but with corn tortillas instead of cubed bread/croutons. Sounds tasty!

    Chef John you are a culinary God to me but I have 2 suggestions for you on this. First is get the whole green chili's in the can and cut them up into bits, it's kind of like shredding the cheese yourself as opposed to buying pre-shredded (bleh), the diced has too much seeds and stems imho. Second is buy the store made tortilla chips by a grocer that starts with S and ends with way. They are the closest to restaurant style tort chips I've found, living in Arizona 🤠

    Purest here this is what we call a New Mexico enchilada , In Chilaquiles the eggs are scrambled not Sunnyside up.

    Another solution may be to beat 6-8 eggs together, combine with salsa, and pour over chips in the pan, top with cheese, and bake at 375 F with a preheated water bath

    I'm currently baking the eggs on top. Challenge accepted! I added my own mix of black beans, so I don't know it it can still be considered chiliquies. That's okay though, it's going to be delicious.

      This is super not traditional. Look for the real thing - it's my favorite breakfast. My Mexican girlfriend makes it for me from scratch all the time. :)

      Chilaquiles are a staple in West/South Texas and along the NM border. I learned to love them in El Paso. The eggs are the star of the dish, really.

    It is by force of will alone that I am waiting until morning to make these.
    I'm thinking it'd be best to do the first bake, leave your oven going while you add the eggs, and then switch to the broiler once you've put it back in. Hot food, hot oven, and heat from above should cook them evenly.

    I have to wonder if the "overcooked" eggs were even cooked through as they looked like they were at that still-gooey-but-not-quite-fully-cooked stage. Also, I think this might be good with some variety of breakfast meat added (diced ham or bacon, for instance).

    Yeah, nah. I would add the spring onions the way you did to ensure an even distribution. If you add it to the sauce, they will sink to the bottom. Also, I'm in Australia but and determined to try and replicate this recipe as best I can with what I can get at Woollies.

    Next time either cover the dish when baking with the eggs or broil it after baking a while uncovered.

    It's worth noting for the uninitiated that Mexican oregano is not even related to the Italian variety you're probably used to. It's actually more closely related to lemon verbena. (I think we should file a class action suit against whoever named it oregano.)

    Looks like it might also make things better to rotate part of the way through after you add the eggs...seems like it might be more of an oven temperature thing there

    It looks like the over/undercooked eggs are on the same sides. Maybe the front and back of the oven are at different temperatures and it just needs to be rotated halfway through?
