- This is the answer to the ultimate pillow soft cheese rolls without the use of mashed potatoes which has a shorter shelf life. This recipe uses the tanzhong method which allows the dough to absorb more liquid hence the dough is softer. Enjoy!

Chef Rose, I love this recipe, thank you so much. This is the softest and the best in my humble opinion among the ones I’ve experimented with.
On another note, I have a request, but only if it’s not too much to ask. When I was going to college at the University of San Carlos, there was a pastry store, I think somewhere in the vicinity of Fuente Osmena, or a street called Ramos, they sold a chocolate roll called black princess. It had a filling, tasted like a cross between pastry cream and yema. It had a really light chocolate frosting. I’m obsessed over it, I can’t find it online. I was wondering if you’ve come across it at all. This was in the late sixties, so I’m sure the shop does not exist anymore. I was hoping you might know of it or be interested in developing a recipe close to it. Keeping my fingers crossed here in Maine, USA. Thank you!
Thank you! I am not familiar with the recipe you mentioned. I do know of the bakeshop Black Princess in Ramos Street. It was owned by Mrs Alvarez, who happened to be my first baking teacher when I was 10 yrs old.

Hi Chef! This recipe is perfect!
However, when I made these, the cheese leaked out from all of them. I used mild cheddar cheese. What did I do wrong?
If your cheese leaked out, it means you were not able to enclose the cheese completely with the dough. Make sure you lock the cheese inside the dough when you roll. Please watch video again.

Don't use a melting or soft cheese. I use cheddar or cheesefood.

Yes you can but bread will be softer with all purpose flour.

I have not tried frying but I do not think it will work with this recipe because it is too soft that it will absorb all the oil.

Learn how to utilize WIRE WHISK, please!
For this recipe, I think a rubber scraper will do a better job because the mixture will be too thick for a wire whisk once it is cooked and the wire whisk will scratch the non-stick coating of the pan. Thank you for your comment.

They will stay soft for 3-4 days. You can wrap well and freeze and reheat in the microwave for few seconds only.

It tenderizers the bread because of increase hydration by pre-gelatinizing the starch in the flour.

Not for bread doughs ma'am. Hindi makaya sa hand mixer. Mix mo lang by hand mga 15 minutes. Good luck!

Hello chef, im back again po, i received my first 40 pcs of orders of the same recipe, and ask ko lng po kung pwede po ba siya ibake using gas oven ? If yes po, ano po ung temp and mins niya po. Salamaat po.
I use same temperature for gas and electric ovens. Baking time is usually about 5 minutes shorter in the electric oven. Get to know your oven because they are not created equal. Congratulations! Hope you will get more orders!

Yes you can.
Hi Chef tanong ko lang po kasi i got a new stand mixer and suggested 2 lang po raw ang speed for dough. In my old kitchenaid mixer, I used the same way as you did. How long ko po iknead kung speed 2 lang po sa mixer salamat po.🙏
I do not knead at speed #2 because it will cause the mixer to blog down since mixing will take a long time. Mixer will overheat by the time you achieve the window pane.
Kneading time depends on when you can achieve the window pane.
Hello chef, I recently bought a commercial convection oven (Venix), I tried to bake your recipe of cheese rolls for the first time using the oven, but it came out dry with brown crust, I already lowered the temperature by 25degrees and even shortened baking time, but it still came out dry and with very brown crust. Do I need steam to achieve soft crust and light color? If so, how much? Thank you. 🙏🏻
Reduce heat by 25-30F. Turn off fan. Shorten baking time. I believe your oven is too hot. No two ovens are created equal. You need to be familiar with how your oven works.

It means you probably over proofed the dough (meaning over rise).

hello Chef, gumawa ako nito kanina and ang sarap. I actually followed a different recipe before using potato flakes pero each time i try is different. Pero in your recipe I feel foolproof ung recipe. Thank you for sharing po, hindi po ako nahiya ibenta sya and sold out in 30 mins agad.

Question po. If using active dry yeast for this recipe how much water should be used to proof the yeast po?
Use the water in the recipe to bloom the yeast plus a teaspoon of sugar to activate the yeast.

Not this dough. There is too much yeast. If you want to proof overnight, reduce the yeast by 50% and proof it inside the refrigerator. 50% is only a guide. You need to make adjustments as needed.

Whole milk is half evap milk and half water. You can also use fresh milk instead of whole milk and no need to dilute it with water. Use two 1/3 cup to get 2/3 cup.

You can use bread flour but all purpose will make the bread softer.
You can use full cream milk or diluted evap milk.
You can keep the tanzhong in the ref for as long as 2 days BUT not the dough with the tanzhong already mixed into the dough.

How can we avoid browning on top?
Either your oven is too hot or you baked it too long. Try baking it at 320F.

Chef ask lang po sana paano po maglagay ng preservatives sa mga bake products at may mairerecommend po ba kau or mY tutorial n po kayo para rito? Salamat po
For breads, use 4 grams anti-amag or calcium propionate for every kilo of flour.
For cakes and cookies, use 1 gram potassium sorbate per kilogram of batter weight (meaning weight of the whole mixture).

Not for this recipe. This was not formulated to work with almond flour. Breads will almond flour is an entirely different recipe/formulation.
