- SANS RIVAL is a frozen dessert cake popular in the Philippines with disputed origins.
It is made of layers of meringue put together with French buttercream and chopped roasted cashew nuts. There are different versions depending on the nuts used. The classic is made with cashew nuts but we now have Almond Sans Rival, Pistachio Sans Rival, etc. This dessert should be kept frozen NOT refrigerated to retain the crispiness of the meringue layers. The secret to crispy meringue is low temperature, long baking time and a lot of patience in between. It is a delicious dessert worth making.

Omg I can’t believe I was doing the same trick to keeping the cake crisp without losing the volume, which is not to fold in the nuts. Doing it this way also makes it easier to create the cake through an icing piper.

Chef Rose, one more thing. I didn't get it if I don't have a Sans Rival ring. I will use the 9-inch pizza plate so I will need 4 9inch pizza plate wrapped with foil to bake my meringue? And the bottom of the foil I will rub a little oil.
Yes ma'am. That is correct. Just wipe the aluminum foil with paper napkins using very little oil. And don't scratch the oil when you put in the meringue.

Use butter if you do not want to use margarine. Shortening has no flavor.

Yes. If you are using a fan in your convection oven, reduce the heat by 20F

You can use butter. It is the best choice. I just use premium margarine to reduce the cost and also it is more stable than all butter in our climate. Sans Rival Ring is 9". Thank you for watching! Happy Holidays!

Replace cream of tartar with lemon juice or vinegar NOT lemon extract.

You need to freeze the meringue OR pack it in an airtight plastic bag inside a covered container.
Can I just use all butter instead of adding margarine? Will it affect the texture of buttercream if you use all butter?
Do you use salted or unsalted butter and do you use roasted salted or unsalted cashews? They sell them both here.

You can use butter instead of margarine. I used butter compound because it is more stable in our climate in the Philippines and it is cheaper than pure butter. Butter will give you the best flavor. Yes you can pipe the meringue into a circle.
As long as your butter is soft, you can use a whisk though your icing will not be a smooth because the whisk creates air bubbles that you don't need.

Is it ok to just use a 9x13 tray and if already baked just cut into 4?
I find using the round cake pans does not work for me because I only have a small oven? Also can I substitute vanilla extract instead of rum . Regarding oven temp I only have Fahrenheit so should I bake at 300 degrees for 40 minutes or should I do an hour
If I can convert to Fahrenheit at 300 do I still need to place a wooden spoon to partially open the oven door?
You can bake in a rectangular pan but be sure you cut it quickly straight from the oven because chances are they are going to crack and break. Rum is optional. You can replace with vanilla. I also use fahrenheit - 300F. Baking time varies from oven to oven and also depending on the thickness of the meringue. Baking time in most recipes are only guides. Yes, regardless if you use C or F, I would partially open the oven door towards the end of the baking period.

I tried pre heating at 320F for 40 min but when I had it cooled it cracked when cutting so you said immediately cut . Now I know
I was hoping my merengue would be thicker so it’s even if it’s on a tray it will heaven layers but for some reason the merengue of course did not rise so I only saved 3 pieces .
Do I also use 8 egg yolks and 8 egg whites. For my egg whites I buy from the store. Do all ingredients including butter have to be in room temperature?

I recommend that you use a baking pan or a baking sheet. Pyrex containers tend to brown too fast and you will have difficulty removing it from the container. Butter should be firm but not necessarily very cold. Egg whites whip better when they are not cold. Use the specified number of eggs in the recipe. Good luck!

Chef, d meringu I know is similar to this but two thicker layers n covered with chocolate icing n covered with nuts just like yours... but my question is the meringu was white inside even after baking it? How do I do that?
Bake your meringue at 280-300F or slow oven. It is not totally white but not brown too.

You can store baked meringue in an airtight container.

You can omit it. The rum removes the "umay" (tagalog) or "bidli" (bisaya) taste of the butter. You cannot taste the rum. But you can omit it.

Baked meringue without icing can be stored in an air tight container at room temperature for 1 month packed in plastic bags and put inside a sealed container.

The cashew is on the darker side.
You mean it's brown? It is supposed to look like that and it is a lot nuttier and tastier.
The cashews are roasted to get the full flavor of the nuts.
