Cool place to work on the boat . Greece . My support for the skeg and rudder post was toast . All seems simple now. Sailing in heavy seas is a little rough . Rougher than I thought
You need to check the rudder stock for crack corrosion. Stainless will not necessarily show corrosion but will break without any warning. That's especially for the inside rudder structure. Also there's been no humanity check on the laminate of the rudder. The EP won't help if it's still wet inside.
use some ranex rust converter / phosphoric acid to the rusty spots on the metal frame - they will then become ferrous phosphate which won't rust and then rinse with water and dry
Starting to look good with the paint-job. LOL I did know that it came from Austria because I am from Vienna originally. August Zang relocated to Paris in 1830's from Vienna to Paris and tweaked the original shortcrust Kipferl to create the croissant and made a fortune. Right back to my boat hunting.

rudder stock all good. The rudder was dry as a bone 👍

A close up of how you tied the rope to the rudder shaft would have been nice to see.
there is a thread at the top of the rudder shaft, we put a bolt in the thread and tied the rope to the bolt
