This looks really good! I like the fact that there is no added sugar-thank you for sharing!
Such a simple recipe, I love how accessible this is as a fermented version of a condiment many of us eat often. No sugar added is a nice plus, lots of us are trying to avoid added sugars where we can. Loved seeing the taste testing and hearing different opinions, our tastebuds evolve as we grow so hearing your kids thoughts on top of yours and Levi's was precious. I'd totally agree it would probably make a great pasta sauce, could even go half and half (or some ratio) with this plus your normal sauce to split the efforts between regular canning and fermenting.

The flavor was very full! I'm guessing the sweetness that is in it comes from the tomatoes and some of the spices in the Chinese 5 Spice powder (like cinnamon). This was very very good and I love being able to use up some older tomatoes as I plan the 2024 tomato forest haha

I have never liked ketchup until my husband made fermented ketchup. It is so amazing, I can’t even explain the beautiful fresh tomato flavor with the fermentation. It’s just wonderful!

I really can’t believe all of the cooking, preserving you get going in your small kitchen! I mean girl, you let nothing stop you from feeding your sweet family healthy yummies!
The people that redid the kitchen in this house put in a nice convection oven and tons of outlets. It used to have a giant fridge too but that died. The previous owner loved to cook and the little kitchen sometimes is difficult but there are other things in it that are so nice!
