      Deep dred eggs are very common in asia. Not like this, this is super bland and boring (and did he just put salt and say eat it with a salad?!) Usually it is done with seasoning and other food like aromatic vegetables (spring onions, onions, garlic, chilli paste...), oysters, meat... you can say it's like deep fried omlete. There is also deep fried egg whites, which is then tossed with pine nuts, crab meat, soy ssauce and vinegar and topped with the raw eggyolk lastly. so many possibilities.

    This is healthier than frying an egg, especially with butter. The high smoke point suggests that he is using an heart healthy oil i.e. canola, butter or anything like that would smoke and could actually ignite at that temperature. It also is not very expensive either since you could reuse the oil, it is however slightly more time consuming.

      @@timthetiny7538Absolutely correct but to be fair, the comment was made 10 years ago when butter was still thought to be detrimental to health.
      The oil used here has a very high smoke point and it’s not made clear what oil was used (unless I missed it), nor is it made clear that seed oils may well ignite so it’s a very dangerous video.

    • @RogersPowell

      Hi there. For best result make sure the oil is at the right temperature and that you arebusing fresh eggs. As the egg age the white part become thinner and runny not protecting the yolk well enough but with practicing keeping the egg in shape with the 2 wooden spatulas you'll be successful with any eggs. Also if the egg sink and stick to the bottom wait 20 second before trying to release it so it is not to fragile. I hope that will help.

    So I recently came across something on Facebook, that you can freeze raw egg (taking it out of its shell first). I wonder how well this would work of you fried a frozen egg vs liquid egg. Maybe it would keep it more solid instead of floating out, but require lower temp oil so that inside eventually gets cooked. I think I'll try it soon.

      Probably not the best way to go tbh. The oil would just flash cook the egg on the outside and leave it raw inside, even more so than normal. Using a lower temp an letting it sit would just result in a overly greasy oil-poached egg.
      If you're trying to cook the egg all the way through, I'd suggest poaching it in water first , bread it and then deep fry it hot and fast to get a good crust.

    Could you do this with beaten eggs? Like a deep fried omelette or something .

  • @mescellaneous
    @mescellaneous Рік тому

    i can not get over how this is not even somewhat recognized. i would suggest not doing the pushing with the wooden tools. try a flip instead, roll it over. then you will have smooth side, and the other side you will see is beautifully crispy. i also do one at a time because im trying to get it extra crispy. this is not like the "fried" egg you get on a pan, where only the edge is crispy and it feels like you are eating a waffle because of the rigidity. you need to brown the entire surface!
    even in this video, everyone is afraid to essentially sear the egg and want to keep it's white appearance. if you fry it this way, brown it all around! you will not get burnt like when you do it in a pan. the deep fry aspect will make it evenly cooked, so don't worry. the high heat aspect will mean the whites expand a bit more, unlike on a flat pan with a thin layer of oil.
