These all look delicious. When I make a falafel bowl, I add pickled turnips. I have to plan ahead about a week for them. After they’re nicely pickled, I add the every meal I can until I get a little tired of them or run out.
I can't wait to try the beet recipe! Up till now, my beet salad has been just grated raw beets dressed with balsamic vinegar: it's delicious, but I'm glad to try something new. Beets are such a superfood. Thank you for sharing your ideas: you're a lovely couple.
I love falafels! I need to make some soon. I also think that that falafel bowl would be terrific with a caramelized onion hummus dressing. I just mix the hummus with a little lemon juice, a splash of red wine vinegar and either a little oil or some vegetable broth for when I don't want or need the extra oil. You could also add a little extra tahini or even some plain yogurt of your choice to mix with it. It's a go to dressing I use since it's so quick and easy to mix up. I also totally need to try that tofu crab salad recipe. That looks so good!
some types of plants actually really enjoy the starch content in the rice rising water so you can definitely save it up to water them! just thought i'd throw it out there since you're rinsing your rice for quite a few times :)

I'm not a dietitian, so this is just a general thought. Maybe try isolating foods and keeping a food journal? One week of rice, tofu, and cooked vegetables. Did that go well? Did it not go well? Switch out one of the categories (carb, protein, veg). Keep switching things out and in for as many "rounds" as you find helpful. Should give you some sort of idea what the issue is 🤷🏻

Would be great to watch vegan food videos that didn't rely on so much darn soy based products. I love Tofu occasionally but it seems most vegans love overdoing it all the time. Also, using soy to recreate the meat like flavors just seems wrong!
So much soy. It all looks delicious but isn't Soy very unhealthy for you? I try to eat it as sparingly as I can. But holy cow, shaved tofu with a block of tofu blended into soy sauce. Wow.

This all looks great! I've been using Kamut as one of my grains lately - I think it would be good in the falafel bowl.
