A lot of this stuff I've either never heard ingame, require specific attire or is cut content. Stuff like kill the priest and oh bugger where did the beast go.. Can anyone clarify?
Unfortunately, I can't confirm what are the triggers for each line, or which lines are cut or otherwise. I know some are muttered when the mobs are idle, so you'd have to either be an invader to not aggro them, or sneak up behind one and just stand there, lol.
Really late but, the "Where'd the beast go?" one is triggered when the huntsmen lose you or while you are hiding from them. When they find you it will also trigger one of the "Found you!" lines
I can't tell if they're speaking British or Austrian. But, after hearing them in game and this video, I can safely say they're most likely speaking some British. Let me know if I'm wrong
Unfortunately, there are no subtitles for the mobs so there's no way to find out what exactly was being said. It seems to resemble Aragon/Eragon (and the other "Luvan") but there are no characters or objects of that name in the game... I've heard this line has a chance to play in 1.00 (and was patched out later), but I cannot confirm that.

Huntsmen in Bloodborne are human enemies hunting threats to Yharnam. Due to the infestation of the scourge, this is what the mob that has risen for the beast hunt have become. The fever-like urge to hunt remains, but they themselves have already been infested with the scourge of the beast. Unaware of this fact, they continue to search for prey to hunt and kill. Perhaps through their murky eyes, humans are seen as the true beasts.

Cameron Hay not completely certain, but starting at 0:46 those lamentations of how they’re cursed can be heard in Central Yharnam. Specifically, in the two story building that leads to the bridge, you know how there is an old man with a shot gun and on a cabinet there’s a lore note (the one that says how the Healing Church closed the bridge so they couldn’t get to Cathedral Ward). If you stand there you will hear them. There are a few variants, all relating to being cursed I’m sure. But perhaps it’s also mentioned there, can’t remember. It’s best just have voice volume to 10 and lower the rest, you will listen clearly this way.
