    Hi,
    I am trying to gather research on canning food.
    Could you please tell me, does canning alter the integrity/crispness/taste etc., or does the food come out of jars, just as it went in? This baffles me, as I would think the heat would alter the food.
    I would appreciate any help here.

      The food in the jar is cooked when you process. Yes, it’s changed

      They can be canned in just water. Their acidity is high enough. They may lose their color and flavor over time.
