Suggestion: load the peaches with the pit hole on the top. If you load them face down, then air gets trapped in the pocket. Alternately, after you install the lid, turn the jar onto it's side, rotate and stand back up, this will allow the trapped air out of the pocket. You might need to add more juice/water before putting them in the canner.
I just came across your video and thought it was perfect. It’s the first time I heard you could use grape juice as the substitute for using sugar, I think that’s a wonderful idea.
Thank you. My peach tree is LOADED with peaches this year. I actually think I can do this. I may have to slice my peaches because I don't remember if they are free stone or not. Just that last year they were DELICIOUS.
Thanks, great video! just wanted to get started canning peaches and you have given me inspiration! Wonderful idea about the grape juice! cheers from Australia!
I've been searching for sugar free jams, jellies and fruits for a couple year, and just found this! So excited, thank you! I have a box of Palisade Peaches to can. We just harvested green grapes (the plants were supposed to be fruitless)... can the juice of these be used???

Did you try it? I'd love to know how it turned out. My partner likes things kind of sweet...Also grape juice is expensive for those of us without grapes.
While grape juice is a great idea, it would add a lot of cost as I would only use organic juice. I have always used a very low sugar syrup - using a sweetened syrup helps preserve the sweetness of the fruit. (I get organic cane sugar in bulk from Azure) I'm going to experiment with some other low-carb sweeteners. 🍑
It does add some cost if you have to purchase it, but I haven't found it to be significant enough of an expense to worry about. Our ultimate goal is to process our own grape juice and not have to purchase it all.
What is the advantage of heating up the peaches first because I saw on someone else's recipe for canning peaches that they thought it made them mushy but maybe you're just doing it for a short time? I think it looked like but I was just wondering versus putting them in the jar raw not heat it up first. What the benefit is? And does the grape juice have to be heated up to pour over raw packed peaches?
1 year without loss of appearance/texture. After that it starts to deteriorate, but still safe to eat. Light won’t do anything other than affect that color/appearance faster.
I just wanted to know if you're doing a raw pack and not heating up the peaches. Do you still have to heat up the white grape juice? Or I was thinking if I was heating up the white grape juice couldn't you just put all the peaches in the juice if you're heating them up too?
thank you so much I was just waiting for your answer to arrange the fruits. thank you very much and much success for you , I have a question , would you be able to preserve lotus root ? it's wud i'm new probe and i'm learning d i have some symptom to prepare. I would be very grateful if you could do it❤❤❤
You are absolutely fabulous. What stores do you do your grocery shopping at? Do you stock up on water? Can you possibly do some in store grocery shopping videos? It would be awesome if you could show how you do your full shopping
Sorry I’m just now responding! I actually don’t shop in stores except for a few basics that we are not currently producing ourselves (milk mostly). I buy almost everything we don’t produce from Azure. Some things come from other online sources.
What is the difference when canning without sugar? I've never added sugar when freezing, but was going to try canning this year and react to processed sugar. I'm seeing various extension offices saying you don't need sugar to can unless it is jams and jellies?
Sugar is added both to increase sweetness and preserve color when canning fruit. The grape juice is naturally high in sugar and accomplishes both. You could also just do water, but you would definitely notice a difference in taste and color. Jams and jellies only require sugar in order to gel with most types of pectin. I use Pomona’s pectin which does not require any sugar. However, I still use natural sweeteners for taste.
@@TheFromScratchFarmhouse very hard to find citric acid is a chemical made from mold it's in everything so called organic you can steam the fruit in a double boiler method no sugars no waste
Hi, I'm your new subscriber, I'm from Switzerland, I have a question. Can I do this process with other fruits? in the apple case; pear, lychee; grape ; pineapple strawberries; I really appreciate it if you answer me because I don't like anything that contains sugar. I will be very happy if you answer me❤❤❤
Hi Sandra, welcome here! Yes, you can use the white grape juice in place of syrup when water bath canning any fruit. Just make sure you follow the canning directions for that particular fruit, such as how long it should be processed. Also, you can use other types of juice if that works better flavor-wise with that fruit. Happy canning!
Oh, I’ll get that fixed! No, I wouldn’t recommend an IP. You could use any large pot that is stove top safe though. You just need something for your jars to sit on off the bottom. A layer of jar rings works in a pinch! Also it should be tall enough so that the water can boil a few inches above the tops of the jars.
I read into things too much. When you’re adding the peaches to the big pan is that just water in the bottom or is that some grape juice? And then your sprinkling the fresh powder over top.
Yes, thank you! It has been very hard to make time for creating videos on top of everything else I have going on. But I''m currently filming some videos and hope to start posting them again soon!

This recipe was so easy and the grape juice such a wonderful idea. You can eat the peaches 🍑 and drink the juice. I made 12 quarts today!! Thanks!! This recipe is a keeper for sure!
Great video! First time ever canning. How do you know if you did it right? My peaches float, I lost some liquid and there are some bubbles in the jar, but they are sealed. How do I know if they are safe?
I'm sorry that I'm just now seeing this! I'm sure you already decided if they were safe to eat, but I'll mention it here anyway. As long as it was processed long enough to kill off any bacteria inside, and the lid is sealed, it is safe. Even if you didn't process it long enough, it could not contain botulism, which is what most people worry about, because peaches are a high acid food. Hope this helps!
Exactly what I was hoping for here. In the ball book they mention using water… I would really like to find someone who cans peaches in water/their own juice.
You definitely can, but keep in mind that it’s less about sweetening the peaches and more about keeping the sugar and peach taste in the peaches. Water is definitely fine, but will dilute the taste.
I just used your video and was very informative and easy to follow! My first time canning peaches!! I’m hoping they all seal well! I use taddler lids and regular ball lids. I was a little overwhelmed with how many peaches I had to peel/cut and core but I did 9 quarts and 1 pint. I felt like a savage trying to get those peaches apart! they were like brand new and hard! I even broke a knife. Maybe I didn’t understand on how to exactly cut them in half and still get the core out easily. Do you scrape the red pieces of core out of the middle? If I didn’t, is it easier to get it off when you take it out of the can?

Can you can peaches with the seed?
I’ve just started to harvest my peaches and I’m so excited to learn this. Really don’t want to add refined sugar so this is great!
I used your recipe to can my peaches in organic white grape juice. The pears were canned in water. Delicious!
What a great way to avoid adding sugar--really enjoy your clear instructions and helpful hints!

Thank you!!! Canning today. We wanted a non-granulated super alternative.
Perfect!
Great alternative. I've been searching for one. I would imagine it can be as a replacement inall manner of canning, chutneys etc.
Great video! This is definitely how I will can my peaches next year, thanks for posting.

Sometimes yes, but I buy some too. I just make sure it is organic and doesn’t include other ingredients.

Oh sorry, how did it go? It’s just water! And the yes, that the fruit fresh just to keep them from browning.
Please come back!
My peaches rose above the liquid should I open them and add more and recan? Or will they bee okay?
Nope, they might brown a bit where they are sticking out of the liquid, but that won't hurt them any. This is very normal.
Are you filming this in a commercial kitchen?
Very nice video.

Could you dilute the white grape juice?
Yes.

What are the substitutes for Fruit Fresh which is chockful of chemicals.
Would love to get an answer. Also white grape juice has 37-40 gm of sugar in 6 oz of juice, so this is certainly not a "low sugar" alternative
Lemon juice is fine. We aren't concerned with natural sugars.
Do you can your pears that way too?
Yes, I do!
