    Love really good peaches!! And peaches with cottage cheese was (and IS) a family favorite as long as I can remember!! I wanted to can a bushel last year for my daughter's family & myself, but they were $100/bushel!! Praying for better this year! God bless!

      I had to reread your comment... $100 a bushel? Oh my... I'd have to pass even though I love peaches. The Georgia peaches, if found, are going to be expensive this season because of losing so much of their crop. Colorado peaches are doing well so far. Those should be available to us in about 5 or 6 weeks so I may get a couple of lugs of those. Although those were $45 a lug last year and they spoiled quickly. I'd like to dehydrate some of those because that makes a good snack. Enjoy your evening. God bless. 😊💜

I appreciate every minute he puts into it! Oh, I tan extremely easy and that's just from working out in the yard here and there.
      I enjoyed the church anniversary picnic today with many energetic young children squealing and having fun. I'm getting too old for that. Sensory overload to my ears. 🙃 But I had a nice time. Hi Carol. Actually this is an older video. We have had rain and storms come right at us almost the past 2 months and then skirt around us or fizzle out into nothing. I just came from town only 8 miles away and we had a flash flood there! You couldn't see the sidewalks or road because they were filling up so fast. I got home and saw our dirt road was wet and I got excited. Then I looked at the rain gauge. We got 1/4" of rain. I'll take it but we need lots more than that! 😊

      @OuttheBackDoor  Рік тому

      Hi happy2cya. I hear the Georgia crop is hurting bad this season because winter was too warm, the peach trees bloomed early, and then you had cold weather (frost?) and modt of the blossoms dropped leaving the orchards with only a handful of peaches. 🥺 I'll be watching for the Colorado peaches in about 5 to 6 weeks, but the price will let me know if I'm getting more or not. I really wanted to dehydrate some for snacks. 😊

I'm not sure where the grocery store will be getting peaches, but I'll have to look for sales. We also have Lane's orchard not to far from us. I've never dehydrated them. I'd love to try freeze drying some, when I save up enough for a freeze dryer.

    Question, I've gotten quite a few harder than usual muskmelons this year and while they taste fine, they're not really pleasant to eat. I wondered if the could be water bath canned?

    • @OuttheBackDoor
      @OuttheBackDoor  Рік тому

      Hi Tammy. That's an interesting scenario! Hard, but tastes good. If that's the case I don't see why you wouldn't be able to can them in chunks like the peaches. Normally melon isn't canned this way because it would get really mushy being they are softer when ripe. Melons are made into preserves and chutneys so it isn't like you can't can melon. If you give this a try, I'd love to hear your results! 😊

      @lisapop5219 - Just a thought to pass along... I've also made what my grandma would have called peach "sauce" from my canned peaches before and used it to baste a ham with. I used to do it quite a bit, but I remember using a jar of spiced peaches instead of plain at least once, & it was a really nice taste. Just something a little different from using pineapple. If I were to try that today, I'd use my plain peaches, with some cinnamon, nutmeg & brown sugar mixed in when I blend it up with my stick blender. (Saving a jar of actual spiced peaches for the holidays 😉) I can see putting that same thing on a pork roast or chops, too. Maybe brush it on a few minutes before taking it/them off the grill.... hmmm.... it IS the weekend....🤔🤔😁
      God bless you & yours 🙏🙏🙏

      Hi chrys. The time I use came from one of my older Ball Blue Books of canning. I'm not sure about the Mennonite time. The shortest period of time I WB can anything is 10 minutes and that's when I'm doing preserves. I do use the open kettle method of preserving when making pickles. 😊

    • @OuttheBackDoor
      @OuttheBackDoor  Рік тому +1

      Becky, when it gets really hot out, I don't can indoors. I'm not heating up the kitchen anymore than I have to. Many times I'll can in the garage or right outside of it. I've got 5 propane burners and a couple of tables I set up to make myself an outdoor kitchen. I'm trying to find an old gas range to hook up in the garage so I can bake out there too when it's really hot out. The only time I'm really concerned about jars breaking is when the outside temp is closer to 40 degrees or cooler and I'm canning huge batches out there. I have no idea how the channels in Alaska can outdoors in the winter! I'd really be nervous about breaking jars! When it's windy here and I'm canning outside, I gently lay a big towel over the jars to cool down and they've been fine.
      The wind has really picked up big time this evening, so I'm expecting some weather to blow in our way. We can definitely use the rain!

      Γεια σου Μαίρη. Αντικαταστήστε τη ζάχαρη με μέλι 1:1 για το πρώτο φλιτζάνι. Μετά το πρώτο φλιτζάνι, χρησιμοποιήστε μόνο 0,75 φλιτζάνι μέλι σε κάθε επιπλέον φλιτζάνι ζάχαρη που απαιτεί η συνταγή.
      Παράδειγμα; Αν η συνταγή απαιτεί 3 φλιτζάνια ζάχαρη, θα χρησιμοποιούσα 2,5 φλιτζάνια μέλι. μετρώ σε Imperial. Επιτρέψτε μου να προσπαθήσω να το κάνω αυτό στη μέτρηση για εσάς.
      Εάν η συνταγή απαιτεί 681 γραμμάρια ζάχαρης, θα αντικαταστήσετε τα πρώτα 227 γραμμάρια ζάχαρης με 227 γραμμάρια μέλι. Για κάθε επιπλέον 227 γραμμάρια ζάχαρης στη συνταγή, θα χρησιμοποιούσατε μόνο 170 γραμμάρια μέλι. Η συνολική ποσότητα μελιού σας θα ήταν 567 γραμμάρια.
      Τα πρώτα 227 γραμμάρια μελιού είναι ίδια με τα 227 γραμμάρια ζάχαρης. Μετά από αυτό μειώνετε το μέλι στα 0,75 της ποσότητας ζάχαρης. Συγγνώμη αν σας μπέρδεψα. Μερικές φορές, όταν προσπαθώ να μετατρέψω τις μετρήσεις Imperial σε μετρικές και μετά πρέπει να αλλάξω τα μαθηματικά, δυσκολεύομαι να τις βάλω σε μια εύκολη οδηγία.

      Two things may have happened. If you didn't de-bubble your jars or you didn't leave enough headspace. Also, did you mean you water bath canned the peaches for 50 minutes? Quarts only need to process 25 to 30 minutes.
