    Hi Ethan, may I know general where I could find dried turbot fish? Will there any diff. by using chicken instead of dried turbot in stock preparation? By the awesome video

      If u uses chicken the end flavor will be different. Dried turbot fish gives a distinctive flavor. Chinese grocery shop usually have them. Or perhaps some chinese herbal shop maybe.

      - yellow croaker
      - red snapper
      - pomfret

    Hi, do you have fish suggestions for this recipe? And any substitute for the cooking wine?

      Hey! You can also cook with snapper, pomfret, etc. Avoid mackerel, sea bass.
      Wine, probably can substitute with XO, brandy.

      @@3thanwong is it possible to cook w/o alcohol? 😅 I wanted to try out your recipe in a "halal" version LOL is it okay to replace cooking wine w grape juice?

      Ohh, then simply skip the alcohol. Grape juice a big no.

    I think for those who want to add flavor bit not usin wine to make it halal can opt for a quarter of chicken stock or anything else to taste, btw does garlic not added?

      Oh, in fact wine can be remove for halal option.
      I do not recommend chicken stock as that would making this dish not delivering the seafood flavor.
      Again, ginger is used in seafood to remove the fishy smell that many find unpleasant.
      But if you like garlic, instead of adding in when you’re boiling the soup, I recommend using fried garlic as toppings when serving.

      I have no idea as I don’t speak hokkien.

      In Chinese it is commonly known as 大地鱼 and 左口鱼
