Totally awesome...for several reasons...simplicity with good explanation, good background history, easy prep and ingredients...and Nonna's presence and input. I think you should do a whole show just on different pastas and their uses (very confusing for us non-Italians).

The fish is because this always occurs during Lent when the tradition was no meat.
She is a typical Nonna. Watch her hands, she wants to do the work but she has let Rossella do the work.

I have to use fettuccine or tagliatelle now since I can't find gluten free mafalde pasta and I'm allergic to wheat.
It still comes out great. I love anchovies.

Thanks for the recipe. You two ladies are wonderful. Trying this out today. Happy Solemnity of St. Joseph. Significance of anchovies is respecting abstinence from meat during lent which is now only required on Fridays of lent and Ash Wednesday in USA. Fish is okay as fish is a symbol of Jesus originating from the first century.

When starting this dish you add olive oil , can you use the oil from the anchovies?
You indicate to not add any salt, but when cooking the pasta, do you salt the water? Thank you.

membernypd nonna just takes them out of the Can with a fork lol so i guess that's the Molese way to strain them

You can see Nonna does not like watching and she is fighting the urge to take over.
I'm pretty sure Mafaldine are named after Princess Mafalda of Savoy, who had the misfortune of marrying a Nazi while (respectably) not being a big fan of Nazis. That's why they're also called "little queens" (reginette). However, symbolically being like wood shavings in this dish is perfectly reasonable :)
Thanks for preserving tradition.. job well done to all involved!. We do a variation sicilian san giuseppe pasta is the same but it has chopped toated walnuts and lightly fried wild fennel frongs
