【Ingredients serves 3】
－Udon Noodles－
300g flour
140ml water
15g salt
－Tempura (batter)－
110g flour
200ml (1 egg yolk + water combined)
+ Any ingredients you want
I used shredded carrots, eggplants, okra, and shrimp.
－Soup－
900ml water
10g kombu
20g dried Sardines
20g thick bonito flakes
5g thin bonito flakes

The garden I went to is my uncle’s garden. He’s been sharing his vegetables with my family for decades and I am very happy to use his vegetables grown by his own hand for my video! I’ll keep harvesting vegetables from his garden for my videos from now on. Seasonal vegetables are the best! :)

No. You have to have the cat help with stepping on the dough. I know it looks like he's just resting a paw, but it adds important leverage. And if he doesn't sniff the eggplant, it explodes in the fryer. That's just how physics works.
The good news is you only need one beautiful and perfectly trained cat. Jun has two 'cause he's extra like that. (Oh, and don't try this with an ugly cat, even if he's trained. Your house will catch fire. The cat has to be beautiful. Again: physics)

I made this for my family! My noodles and other sliced things were probably a bit too thick, but I had fun and it tasted good! I'm glad there is a Japanese market in Seattle! My stepdad helped me get the ingredients, so it was fun!

I made this today for New year's lunch, very clear video and delicious udon. Tyvm
One of my favorite classics. This is something I have to do for my family.
So I actually tried making this and it came out really good but there are a few things you wanna keep in mind: 1. I didn't know what flour to use for the noodles so I used all purpose flour with 150-160g of water because 140g was way to dry. 2.dried sardines were hard to find at my local store so I bought Memmi Soup base, bonito flakes, and kombu which made the stock turn out fine when added in with the soy sauce and salt. 3. If you don't have pasta machine, cut the udon noodles thinner than you would expect because they do puff up a little bit when boiling. (depending on your noodles too they may take longer than 10 mins. Mine took 15.)4. Making noodles without a machine takes way longer than you think (this whole thing took 3 hours start to finish with about 2 hours being making the noodles). 5. A poached egg really completes the dish but that's just my preference. I hope this helps!

for the flour difference the 140g one was dryer for you because of humidity differences. Since Japan has a much higher humidity than the us/europe/canada you would find that yours would be a lot dryer. an example is that i live in singapore and the humidity here is god aweful so when i want to make this i may have to decrease the amount of flour i use.(derped once and made bread with 'usa standards' it came out super dense)
Try looking in Asian markets. Nine times out of ten, they might have what you need.
You can make a video an hour long and I'd still watch the whole thing. Your videos are so calming and satisfying!
