With just a handful of ingredients, including nutritious cabbage and protein-rich eggs, this dish offers a flavorful alternative to traditional breakfast options. The addition of Provençal herbs adds a fragrant aroma, while the soft mozzarella cheese lends a creamy texture that perfectly complements the tender cabbage. Finished with a drizzle of tangy tomato sauce and a sprinkle of fresh green onions, this omelette is a feast for the senses that promises to delight with every bite. Whether enjoyed as a hearty breakfast or a light lunch, this recipe is sure to become a favorite in your culinary repertoire. 😍
Ingredients for Cabbage Omelette:
1/2 teaspoon Provençal herbs
1/2 onion
Green onions
300 grams (10.5 ounces) cabbage
2 eggs
Black pepper and salt to taste
Olive oil
Soft mozzarella cheese
Tomato sauce
Instructions:
Finely chop the cabbage and onion.
In a bowl, beat the eggs and season with black pepper, salt, and Provençal herbs. Stir in the chopped cabbage and onion.
Heat a frying pan over medium heat and add a little olive oil.
Pour the cabbage and egg mixture into the pan and spread it evenly. Cover and cook for 5 minutes.
After 5 minutes, flip the omelette using a plate or lid.
Brush the cooked side of the omelette with tomato sauce and sprinkle with soft mozzarella cheese.
Cover the pan again and cook for another 4 minutes or until the cheese melts and the omelette is cooked through.
Once done, sprinkle the omelette with finely chopped green onions.
Serve hot and enjoy your quick and easy cabbage omelette!
