Caramel Pecan Clusters--European Measurement Conversion 230 grams or 500ml or pecan pieces 115 grams lightly salted butter 225 grams light brown sugar 250ml light cream or half and half 125ml light corn syrup 2ml vanilla 340 grams semi-sweet chocolate pieces (or chips) Cook to 116°C This is just a metric conversion. I know some of the measures are preferred as weight instead of volume. I'm not sure which you needed for each ingredient.

It was the best candy I have ever tasted! They call them Snappers though, so I had no idea what I was looking for. I have a couple of questions though. I do not have light cream or half and half. Can I use condensed milk? What can I substitute for the shortening also? Wish me luck in making these, for my arms do not work well - MS and muscular problems. Stirring is very difficult. @@daschundloverable Hi and thanks for watching. I have never tried this with condensed milk before, but I suspect it should work fine. And you can just omit the shortening in the chocolate. It’s there to keep the melted chocolate smooth. This Christmas, I’ve been making these in an 11 x15” jelly roll pan and cutting the candy into squares. It’s much less tedious. And you only need to stir a few times during the cooking process and it’s very easy to stir. Best of luck in making these candies. Caramel consistency is a logistics dilemma: soft enough to bite easily, and it goes all over when you're trying to make these; slightly firmer, and its difficult to eat on camera. At the time I would have been glad for the silicone candy molds that are so readily available now. I would have dropped the caramel temp three or four degrees for a softer finished product. When we started making videos, we knew having the cats was controversial and were prepared for the fallout, but words of support, encouragement and acceptance are always a welcome treat. 😊 I've had a few suggestions here, presumably by candy makers and the like to use candy melts instead of actual chocolate and to start with a small puddle of chocolate on the bottom, followed by the nuts, caramel and chocolate top. And I did pack them, individually wrapped, pretty tightly in a tin. My parents, siblings, in-laws and friends say they are great even after several days on the mail truck. I didn’t even see the cat! Now I’m going back in the video to try and find him. I don’t think the commenters are necessarily cat haters. I love cats, and have two Birman of my own but they are not allowed on the kitchen counters. Not because of their hair, but because of where their paws have been. You can pick up some nasties making you really ill, but not being critical, to each their own. As you said, Your house, your rules. Still, I wouldn’t have pointed it out.

A few dessert chefs have suggested using dipping chocolate (essentially chocolate-flavored candy) in lieu of actual chocolate. You dont have to worry about the chocolate "blooming" and the flavor is the same. Thanks for watching and commenting. 😊

Great recipe. The first batch was too hard and a loss. The caramel was hard as a brick and was cooked to 242°F, however the altitude I learned plays a factor in making candy. With an adjustment to the cooking temperature to 232°F based on my altitude the caramel turned out perfect. At sea level 242°F may be the ideal setting for this recipe but if you don't live at sea level you have to make adjustment to the cooking temperature. Quick note to my fellow candy makers, test your candy thermometer in a pot of boiling water. Water boils at 212°F at sea level. If your thermometer shows a lower temperature than subtract that number from 212°F and use that number to subtract from the 242°F.

I have been making these in a sheet and cutting them into squares so it’s not as tedious and I think I lowered the temp by two degrees so they were a bit softer still. I stored them in my tummy. 😁 Like all candy, store at room temp in an airtight container. If you need to keep them for longer than 2 weeks, vacuum seal and freeze. Bring them to room temp inside the bag before opening to avoid condensation forming directly on the chocolate. I don't recommend ziplock bags for freezer storage since they aren't really airtight, although they should be fine for a month before you get noticable freezer burn. Hi Laurice! I think you have the best video and recipe for making pecan turtles on UA-cam. I have recently mastered making the caramel, pouring it into a pan, and then cutting it into squares. I would like to use the caramel as you are, for turtles. But I am afraid, very afraid. Do you really have enough time to scoop the caramel onto the nuts without it hardening in your pan? We did make this entire recipe on camera without any editing tricks. So yes, it is possible to scoop them all out without the caramel setting up. 🙂 But lately I’ve been making these as an entire pan and cutting the finished turtles into squares to give away. 1. That sounds delicious. 2. I have never tried it, but it might work best if you chopped the nuts and mixed them in after the caramel came to temp, them poured it over the prebaked crust. I have no idea if you need to make more than one 9x13 inch crust. I recommend trying it now and letting me know how it worked out. 😁😋 Although, I should probably try this too. Yum! 😊

@@aly7553 if you're using premade caramels, try adding milk rather than water. I think the water will just make the caramel grainy rather than smooth. Also, just heat the caramel enough to melt it. The microwave might be easiest, then stir in milk, a tablespoon at a time until the caramel pourable, but not runny. At room temp, it should still be soft. I've never made these with premade caramel so I cant give you an exact amount on the milk, but my guess is 3-4 tablespoons for a 12 ounce bag of caramels. And thanks for the comment on the cat. Hi! I’m making turtles for the first time so your video is among one of plethoras of others I’ve watched to learn how to make some. I was curious about your caramel and how it didn’t crystallize! Other videos swore up and down that you can’t stir it at the beginning (only swirl the pot) to prevent crystallization and they also added the butter at the end. You did what you wanted and it turned out perfect! I’m really nervous about messing up because these are a gift for a good friend but it seems like I’d be fine doing it the way you did? Do you test the chocolate to see if it’s tempered before adding it to the candy? The candy looks delicious!
First, yea!!! for making your own candy. ❤ Now onto the questions. Adding the corn syrup keeps the caramels from crystallizing even with frequent stirring, which I do from the beginning. The biggest factor in caramel success is temperature so make sure your thermometer is reading the temperature correctly. Err on low side by a one or two degrees if you are concerned. Chewy caramel is great, but soft caramel is easier to eat. 😊 As for the chocolate, tempering isn't difficult. Reserve about a quarter of the unmelted chocolate. After you've melted the remaining chocolate, take it off the heat and then stir in the unmelted chocolate for easy tempered chocolate. Several people have also suggested using a good chocolate candy for worry free chocolate topping. Ghirardelli makes a good chocolate dipping candy. Sometimes I think recipes are needlessly complicated to keep people from trying their hand at it. If you need me to clarify anything don't hesitate to ask. Candy is hard. Incan,t even melt choc chips for ganache w/out it turning to sugar. Fred has Russell Stover 10 oz boxes of choc.s 2 for 1 but the one is $6 so that's bo deal. 7 packs of Turtles is about the same amount for $10.
I think the crystallization happens when you are using just water and white sugar. This recipe uses brown sugar, half-and-half and the corn syrup. I had zero problem with the crystallization. I did have a problem with licking the pan and the scooper after the pecans were covered. Laurice should have named this recipe, Crack Turtles!!!
Your the only recipe I’ve seen thus far that has used caramel as well. Is it possible to dip the whole clusters in the chocolate once the caramel has set ? I would like for both sides to be covered in the chocolate. Also I bust out laughing when you put the cluster in your mouth. Wasn’t expecting it but was pleasantly surprise. 😂😆
😁 I too have contemplated dipping them. You should be fine dipping the whole thing once it's set. I would set them on a cooling rack to allow excess chocolate to drip off. You certainly can do that. I don't know how quickly the caramel will set up once you stir in the pecans, but I know you'll need to work quickly. I would cook the caramel 3-4 degrees cooler if you want to stir in the nuts. It won't be quite the same candy, but delicious nonetheless. Happy new year!! 🙂

I’m sure you can just google it to find your nearest source. I just uploaded an updated and slightly modified version of this candy on Monday. I make it as a single pan, use milk chocolate to top it and then lightly salt the top with coarse salt. Then I cut these into squares. It’s much less time consuming and absolutely delicious. I think 234-236°F would be good for apples. But you may need to keep it warm or have people helping dip them. I’d also let the apples come to room temp before you start this whole process.
It’s not really a silly question except that these have never lasted more than a couple of days. 😋 They can be stored in any airtight container at room temperature with parchment paper between layers of candy or they stick together. They will last for weeks, but the chocolate will eventually bloom and the nuts will go stale. They’re still fine to eat, but the taste won’t be fresh and the candy may look less appealing. Very similar recipe to mine. However, I like my caramel with a deeper, darker taste. Have you ever tried using dark brown sugar and molasses for the light corn syrup? Give it a try some time... But the key is the butter. You can make turtles for me any time!!

The recipe is blow the credits in the description box, but it is a double recipe. I don’t know how many cups it is since brown sugar is usually packed. when you were speaking about the amount of light cream at the beginning, you mentioned 1 cup, and at the end you had written down 1 cup, and then just below you've translated the ingredients and you write 250ml (or 1 cup). But below in your comments you say you made a mistake and it's actually 2 cups. Which measurement is correct (PS I love that your cat helped you!)

Once I noticed the cat on the counter...I was taken aback for sure, but not surprised. Then of course I see some of the reactions to it, and yours and others responses to the reactions.... Listen; it IS your kitchen & your rules; Absolutely! And those who agree that there is no issue; that’s certainly their opinion as well. I have a furBaby too, and I love her to pieces. She pretty much has full run of the house, no real restrictions. However, my kitchen is where MY boundary is enforced! And even as diligent as I am about cleanliness and germ control; I recognize that despite my best efforts, sometimes I still find cat hair in places that would make me cringe if I saw it in someone else’s house. But that’s me. I will say this though....it should come as no surprise that some ppl may find it off-putting to see a cat on the very counter you are preparing food on? Cats stand in their #toilet, and that’s all I’m go’n say. But if you that’s how you operate your kitchen, so be it, Right?! Kitchen etiquette is going to be different from person to person. Yes, our cats do stand in their litter boxes which are cleaned and bleached daily. I don’t prepare food directly on the counter for this very reason. Cat hair, human hair and dog hair is everywhere in our house, even the attic where no animals go. That particular cat, one of five in the litter we adopted, was extremely attached to me. She loved being with me every chance she got, especially when the camera was running. She passed in my arms almost two years ago now, and I still cherish every video I see her in here. When we cook for friends, we make sure the animals are wrangled, but for the videos we have no problem with four legged cameos. Many viewers in this video and others love seeing the cats and I can easily stand the haters when the cats bring joy to others. Thanks for watching and commenting and happy new year.
I don’t think so, but if you have milk, you can mix it half milk and half heavy cream to get much closer. Heavy cream is 36% butterfat and lite or half and half is about 21%.

I made this today and it was a complete failure. The temp of 242 degrees took about 15 minutes but you said it would take close to an hour so I went with that. By the time I was half way done with putting the caramel on the pecans the caramel was as hard as a rock. You might want to redo this recipe. I was sooo bummed of my turtles.
I’m sorry this didn’t work out for you. The burner temp should be in the medium low range. I’ve made these dozens of times and it’s never taken less than 45 minutes to come to temp. Always use the temperature for candy making since that determines what the sugars do when they cool. I do have a pan version of these candies (salted caramel pecan squares which are much less tedious if you want to try again), but you’re in the same boat with the caramel. Don’t give up; they’re so good. 😊 Happy new year.

+Octavia Crews That is the one piece of equipment that is necessary when making candies. Accuracy is a must. Luckily they are pretty inexpensive. So buy, beg, borrow, or steal one. Ok, don't steal one. :-) You can use other thermometers as long as they read up to your desired temperature accurately. Methods that involve you cooling a tiny amount of the candy and checking the consistency take too much time and are a bit dangerous. If you like making these candies, the thermometer's modest investment is well worth it. I use mine at least once a week, if not more.
+lucia nguyen Yes, you can use a digital thermometer as long as it goes to the correct temperature. The candy thermometer is cheap and usually quite accurate. The digital thermometer I have sometimes doesn't read accurately. It jumps 20°F depending on how it's placed. The bulb of the thermometer should be in the hot candy. You place it down in the pan and slide the clip into place over the pan.

SMH people are really worried about the wrong things. I’m pretty sure everyone clicked on this video to find out how to make the clusters. The cat on the counter has nothing to do with you learning how to make them. It could have been 1,000 cats on the counter and that still has nothing to do with the recipe. Either you make them or you don’t.
Caramel Pecan Clusters--European Measurement Conversion
230 grams or 500ml or pecan pieces
115 grams lightly salted butter
225 grams light brown sugar
250ml light cream or half and half
125ml light corn syrup
2ml vanilla
340 grams semi-sweet chocolate pieces (or chips)
Cook to 116°C
This is just a metric conversion. I know some of the measures are preferred as weight instead of volume. I'm not sure which you needed for each ingredient.
So are you putting the thermometer all the way down in the pot ?
Yes. The bulb is slightly off the bottom due to the shape of the candy thermometer. But the metal base of thermometer is in the bottom of the pan.

It was the best candy I have ever tasted! They call them Snappers though, so I had no idea what I was looking for.
I have a couple of questions though. I do not have light cream or half and half. Can I use condensed milk? What can I substitute for the shortening also? @@daschundloverable Hi and thanks for watching. I have never tried this with condensed milk before, but I suspect it should work fine. And you can just omit the shortening in the chocolate. It’s there to keep the melted chocolate smooth. This Christmas, I’ve been making these in an 11 x15” jelly roll pan and cutting the candy into squares. It’s much less tedious. And you only need to stir a few times during the cooking process and it’s very easy to stir. Best of luck in making these candies. Caramel consistency is a logistics dilemma: soft enough to bite easily, and it goes all over when you're trying to make these; slightly firmer, and its difficult to eat on camera. At the time I would have been glad for the silicone candy molds that are so readily available now. I would have dropped the caramel temp three or four degrees for a softer finished product. When we started making videos, we knew having the cats was controversial and were prepared for the fallout, but words of support, encouragement and acceptance are always a welcome treat. 😊 I've had a few suggestions here, presumably by candy makers and the like to use candy melts instead of actual chocolate and to start with a small puddle of chocolate on the bottom, followed by the nuts, caramel and chocolate top. @@adgroves6461 Yes, I've shipped them and they hold up perfectly. I believe I refrigerated them beforehand so the caramel was pretty firm during shipping. And I did pack them, individually wrapped, pretty tightly in a tin. My parents, siblings, in-laws and friends say they are great even after several days on the mail truck. I didn’t even see the cat! Now I’m going back in the video to try and find him. I don’t think the commenters are necessarily cat haters. I love cats, and have two Birman of my own but they are not allowed on the kitchen counters. Not because of their hair, but because of where their paws have been. You can pick up some nasties making you really ill, but not being critical, to each their own. As you said, Your house, your rules. Still, I wouldn’t have pointed it out.

A few dessert chefs have suggested using dipping chocolate (essentially chocolate-flavored candy) in lieu of actual chocolate. You dont have to worry about the chocolate "blooming" and the flavor is the same. Thanks for watching and commenting. 😊

Great recipe. The first batch was too hard and a loss. The caramel was hard as a brick and was cooked to 242°F, however the altitude I learned plays a factor in making candy. With an adjustment to the cooking temperature to 232°F based on my altitude the caramel turned out perfect. At sea level 242°F may be the ideal setting for this recipe but if you don't live at sea level you have to make adjustment to the cooking temperature. Quick note to my fellow candy makers, test your candy thermometer in a pot of boiling water. Water boils at 212°F at sea level. If your thermometer shows a lower temperature than subtract that number from 212°F and use that number to subtract from the 242°F.
Thank you for the information. 😁 I knew baked goods were subject to altitude adjustments, but hadn’t realized candy had the same issues. I have been making these in a sheet and cutting them into squares so it’s not as tedious and I think I lowered the temp by two degrees so they were a bit softer still. Easy recipe and great presentation. All that was needed was instruction on how to store them.
I stored them in my tummy. 😁 Like all candy, store at room temp in an airtight container. If you need to keep them for longer than 2 weeks, vacuum seal and freeze. Bring them to room temp inside the bag before opening to avoid condensation forming directly on the chocolate. I don't recommend ziplock bags for freezer storage since they aren't really airtight, although they should be fine for a month before you get noticable freezer burn. Ours have never lasted long enough for storage. Thanks for watching and commenting. 🙂

Hi Laurice! I think you have the best video and recipe for making pecan turtles on UA-cam. I have recently mastered making the caramel, pouring it into a pan, and then cutting it into squares. I would like to use the caramel as you are, for turtles. But I am afraid, very afraid. Do you really have enough time to scoop the caramel onto the nuts without it hardening in your pan? It seems to set up so fast. I'm just looking for a little reassurance. Thank you for your time.
We did make this entire recipe on camera without any editing tricks. So yes, it is possible to scoop them all out without the caramel setting up. 🙂 But lately I’ve been making these as an entire pan and cutting the finished turtles into squares to give away. Can you substitute coconut oil for shortening?

She’s on the counter sitting quietly for only a few seconds while I’m getting ready to apply the caramel. That is an adjustable measuring cup by OXO. It comes in 1 cup and 2 cup measures and should be available online or in stores that sell OXO products like Target and bed bath and Beyond. I have both and I use them all the time. Hello Laurice, Do you think the pecan caramel portion of the recipe would work to make pecan bars with a shortbread crust? I am making your turtles recipe for Christmas. We always got a box of Turtles as a present at Christmas. Thank you for this recipe.
1. That sounds delicious. 2. I have never tried it, but it might work best if you chopped the nuts and mixed them in after the caramel came to temp, them poured it over the prebaked crust. I have no idea if you need to make more than one 9x13 inch crust. I recommend trying it now and letting me know how it worked out. 😁😋 Although, I should probably try this too. Yum! 😊

I didn’t make my own caramel, I used already made caramels.
@@aly7553 if you're using premade caramels, try adding milk rather than water. I think the water will just make the caramel grainy rather than smooth. Also, just heat the caramel enough to melt it. The microwave might be easiest, then stir in milk, a tablespoon at a time until the caramel pourable, but not runny. At room temp, it should still be soft. I've never made these with premade caramel so I cant give you an exact amount on the milk, but my guess is 3-4 tablespoons for a 12 ounce bag of caramels.

Hi! I’m making turtles for the first time so your video is among one of plethoras of others I’ve watched to learn how to make some. I was curious about your caramel and how it didn’t crystallize! Other videos swore up and down that you can’t stir it at the beginning (only swirl the pot) to prevent crystallization and they also added the butter at the end. You did what you wanted and it turned out perfect! I’m really nervous about messing up because these are a gift for a good friend but it seems like I’d be fine doing it the way you did? Do you test the chocolate to see if it’s tempered before adding it to the candy? The candy looks delicious!
First, yea!!! for making your own candy. ❤ Now onto the questions. Adding the corn syrup keeps the caramels from crystallizing even with frequent stirring, which I do from the beginning. The biggest factor in caramel success is temperature so make sure your thermometer is reading the temperature correctly. Err on low side by a one or two degrees if you are concerned. Chewy caramel is great, but soft caramel is easier to eat. 😊 As for the chocolate, tempering isn't difficult. Reserve about a quarter of the unmelted chocolate. After you've melted the remaining chocolate, take it off the heat and then stir in the unmelted chocolate for easy tempered chocolate. Several people have also suggested using a good chocolate candy for worry free chocolate topping. Ghirardelli makes a good chocolate dipping candy. Sometimes I think recipes are needlessly complicated to keep people from trying their hand at it. If you need me to clarify anything don't hesitate to ask. Candy is hard. Incan,t even melt choc chips for ganache w/out it turning to sugar.
Fred has Russell Stover 10 oz boxes of choc.s 2 for 1 but the one is $6 so that's bo deal. 7 packs of Turtles is about the same amount for $10.
I think the crystallization happens when you are using just water and white sugar. This recipe uses brown sugar, half-and-half and the corn syrup. I had zero problem with the crystallization. I did have a problem with licking the pan and the scooper after the pecans were covered. Laurice should have named this recipe, Crack Turtles!!!
Your the only recipe I’ve seen thus far that has used caramel as well. Is it possible to dip the whole clusters in the chocolate once the caramel has set ? I would like for both sides to be covered in the chocolate. Also I bust out laughing when you put the cluster in your mouth. Wasn’t expecting it but was pleasantly surprise. 😂😆
😁 I too have contemplated dipping them. You should be fine dipping the whole thing once it's set. I would set them on a cooling rack to allow excess chocolate to drip off. You certainly can do that. I don't know how quickly the caramel will set up once you stir in the pecans, but I know you'll need to work quickly. I would cook the caramel 3-4 degrees cooler if you want to stir in the nuts. It won't be quite the same candy, but delicious nonetheless. Happy new year!! 🙂

It’s tough to watch them grow from tiny 4 day old babies to feisty cats to elderly sick cats declining with age and disease, but I wouldn’t trade any of it in. And we always have room in our hearts for more. 💜💜

Thank you!! I just recently made 5 pans of this candy to give as gifts this past holiday. 🎄❤️🍫 The Guittard chocolate is available in our grocery stores so I don’t have a link for it. I’m sure you can just google it to find your nearest source. I just uploaded an updated and slightly modified version of this candy on Monday. I make it as a single pan, use milk chocolate to top it and then lightly salt the top with coarse salt. Then I cut these into squares. It’s much less time consuming and absolutely delicious. What stage do I need to cook to for apples ...
I think 234-236°F would be good for apples. But you may need to keep it warm or have people helping dip them. I’d also let the apples come to room temp before you start this whole process.
This may seem like a silly question but how long will these last and what’s the best way to store them?
It’s not really a silly question except that these have never lasted more than a couple of days. 😋 They can be stored in any airtight container at room temperature with parchment paper between layers of candy or they stick together. They will last for weeks, but the chocolate will eventually bloom and the nuts will go stale. They’re still fine to eat, but the taste won’t be fresh and the candy may look less appealing. I will probably make them both!! 😂 I was wondering about their “shelf life” because I love to cook and give goodies to friends and family. I’m from Mississippi so pecans are my love language. Turtles are my favorite candy but I’ve never made many candies. I will definitely get my feet wet with these!
Very similar recipe to mine. However, I like my caramel with a deeper, darker taste. Have you ever tried using dark brown sugar and molasses for the light corn syrup? Give it a try some time... But the key is the butter. You can make turtles for me any time!!

The recipe is blow the credits in the description box, but it is a double recipe. I don’t know how many cups it is since brown sugar is usually packed. You should be able to buy a 1 pound bag of it though. I do have a less tedious version of these: salted caramel pecans squares if you’re interested. Merry Christmas. 🎄

when you were speaking about the amount of light cream at the beginning, you mentioned 1 cup, and at the end you had written down 1 cup, and then just below you've translated the ingredients and you write 250ml (or 1 cup). But below in your comments you say you made a mistake and it's actually 2 cups. Which measurement is correct (PS I love that your cat helped you!)

I have a furBaby too, and I love her to pieces. She pretty much has full run of the house, no real restrictions. However, my kitchen is where MY boundary is enforced! And even as diligent as I am about cleanliness and germ control; I recognize that despite my best efforts, sometimes I still find cat hair in places that would make me cringe if I saw it in someone else’s house. But that’s me.
I will say this though....it should come as no surprise that some ppl may find it off-putting to see a cat on the very counter you are preparing food on? Cats stand in their #toilet, and that’s all I’m go’n say. But if you that’s how you operate your kitchen, so be it, Right?!

Yes, our cats do stand in their litter boxes which are cleaned and bleached daily. I don’t prepare food directly on the counter for this very reason. Cat hair, human hair and dog hair is everywhere in our house, even the attic where no animals go. That particular cat, one of five in the litter we adopted, was extremely attached to me. She loved being with me every chance she got, especially when the camera was running. She passed in my arms almost two years ago now, and I still cherish every video I see her in here. When we cook for friends, we make sure the animals are wrangled, but for the videos we have no problem with four legged cameos. Many viewers in this video and others love seeing the cats and I can easily stand the haters when the cats bring joy to others. Thanks for watching and commenting and happy new year.
Can we use heavy cream?
I don’t think so, but if you have milk, you can mix it half milk and half heavy cream to get much closer. Heavy cream is 36% butterfat and lite or half and half is about 21%.

William Jones I use it on the little scoop I'm dishing out the caramel with. If you use a spoon, just lightly spritz that to keep the caramel from sticking to it.

The videos with this particular cat are always a treat to watch. She passed away in my arms Feb 15th of this year, and I love being able to see her here.

I made this today and it was a complete failure. The temp of 242 degrees took about 15 minutes but you said it would take close to an hour so I went with that. By the time I was half way done with putting the caramel on the pecans the caramel was as hard as a rock. You might want to redo this recipe. I was sooo bummed of my turtles.
I’m sorry this didn’t work out for you. The burner temp should be in the medium low range. I’ve made these dozens of times and it’s never taken less than 45 minutes to come to temp. Always use the temperature for candy making since that determines what the sugars do when they cool. I do have a pan version of these candies (salted caramel pecan squares which are much less tedious if you want to try again), but you’re in the same boat with the caramel. Don’t give up; they’re so good. 😊 Happy new year.

what if you don't have a candy thermometer?
+Octavia Crews That is the one piece of equipment that is necessary when making candies. Accuracy is a must. Luckily they are pretty inexpensive. So buy, beg, borrow, or steal one. Ok, don't steal one. :-) You can use other thermometers as long as they read up to your desired temperature accurately. Methods that involve you cooling a tiny amount of the candy and checking the consistency take too much time and are a bit dangerous. If you like making these candies, the thermometer's modest investment is well worth it. I use mine at least once a week, if not more.
Can I buy a digital thermometer ?
+lucia nguyen Yes, you can use a digital thermometer as long as it goes to the correct temperature. The candy thermometer is cheap and usually quite accurate. The digital thermometer I have sometimes doesn't read accurately. It jumps 20°F depending on how it's placed. The bulb of the thermometer should be in the hot candy. You place it down in the pan and slide the clip into place over the pan.

The cat on the counter has nothing to do with you learning how to make them. It could have been 1,000 cats on the counter and that still has nothing to do with the recipe. Either you make them or you don’t.
