But it is a pure gamble in general. That's because here in mexico the public water system only watches for it to be a certain grade of "clean" but that "clean" is not "edible clean". Your safe bet is bottled water or the 20 liter water jugs that are everywhere in Mexico.

I went to Peru this year, and man. Peruvian ceviche is just, something else dude. I love South America. The people there are amazing, and the food is amazing.
I'm one of those people to whom cilantro tastes like sh... yah, uh, soap. My son loves it, and it's a struggle to get him to make my portion with the cilantro not in it.
Let me add my thanks as well - I will put it in things that just my husband eats but gah, it just ruins the whole dish for me (which sucks, if you take it out, I love Mexican food - but try finding a restaurant that does this). The day I realized it wasn't a 'being picky' thing but a 'just like you genes means your pasty assets burn under anything more than a nightlight setting, it also causes the flashback to Gram and getting my mouth washed out with soap" thing to happen. It was a relief actually. (my husband says parsley and oregano can get closer to what it's meant to without the dishsoap, so I tend to lean that direction.)
I agree. Sometimes it gets exhausting trying to find things without it. If I'm out to eat I tend to just order things that don't have it so I don't have to always ask for them to leave it out, but the other day we tried a new place that had it in everything! Literally the plain nachos were the only thing I did not see cilantro in the description. I almost asked the waiter to make sure it wasn't added to my diet coke.

I learned that when you dislike the taste of cilantro it’s likely you have heavy metals in your system. Herbs like cilantro detox the metal and cause a chemical reaction, hence the soap taste. People who enjoy cilantro probably don’t have as much metal in their system. I learned this recently. Hope this helps!👍🏼

That must suck man. But subbing parsley will give you the texture, which seems better than just leaving it out. The texture cilantro brings is also a part of the dishes that use it.
as a native angeleno, I can confidently say this is a pretty authentic recipe (at least for sinaloa style ceviche). I love the inclusion of lemon to balance the more bitter flavor of the limes, and i also think leaving the cucumber skin is a nice touch. Well done compa!

@@mikasasukasa4479 depends what state your from. It’s reminiscent of cocktail de camarón. It’s pretty good, I tend to do less ketchup and more hot sauce, you should try it
We make ceviche where I live but we just call it “raw fish”, my dad uses whatever fish he’s caught and marinates it in lemon juice for a few hours, red onion, celery, tomato, parsley (coriander isn’t widely used where I live), all finely chopped with some cayenne pepper. He usually drains most of the lemon juice out and combines it with the fish with the rest of the ingredients and adds coconut cream. It’s a South Pacific style ceviche (because we live in the South Pacific haha). The fish he usually uses is called Kahawai and is a very meaty fish so when it gets marinated in the lemon it keeps its structure. If you use fish like snapper it will probably fall apart because it’s too delicate for that. It’s very delicious with coconut cream. I prefer it with more lemon but everyone always loves his “raw fish”/ceviche.

I have found that celery greens are a good replacement, they have that peppery note and my friends have never noticed that I don't use cilantro.

That must suck man. But subbing parsley will give you the texture, which seems better than just leaving it out. The texture cilantro brings is also a part of the dishes that use it.

The best ceviche I ever had was conch salad, in the Bahamas. It was just a shack on the beach. The line was always long, but well worth it!

as a native angeleno, I can confidently say this is a pretty authentic recipe (at least for sinaloa style ceviche).
I love the inclusion of lemon to balance the more bitter flavor of the limes, and i also think leaving the cucumber skin is a nice touch. Well done compa!

My mom likes to put in the onion with the shrimp at the beginning to pickle them a little - we also optionally add hot sauce (tapatio) and/or ketchup

i adore this chef.
We make ceviche where I live but we just call it “raw fish”, my dad uses whatever fish he’s caught and marinates it in lemon juice for a few hours, red onion, celery, tomato, parsley (coriander isn’t widely used where I live), all finely chopped with some cayenne pepper. He usually drains most of the lemon juice out and combines it with the fish with the rest of the ingredients and adds coconut cream. It’s a South Pacific style ceviche (because we live in the South Pacific haha).
The fish he usually uses is called Kahawai and is a very meaty fish so when it gets marinated in the lemon it keeps its structure. If you use fish like snapper it will probably fall apart because it’s too delicate for that.
It’s very delicious with coconut cream. I prefer it with more lemon but everyone always loves his “raw fish”/ceviche.
