In a country where-as Gastón Acurio said-ceviche is way more than a recipe, "it's a way of life", it's pretty much a given that Peruvians take the dish pretty seriously. Javier Wong is arguably the top ceviche-maker in the country-some even call him the godfather of ceviche. He's not only well-respected in the chef community, but also amongst serious ceviche eaters.
His "secret" (although he claims there's no secret) is in the simplicity of the dish. It's almost like a minimalistic ritual; you need the freshest possible fish (he only works with sole), Peruvian limes, onions, salt and pepper. And a lot of love to mix it with.
He only works out of his own small house in the working class neighborhood of La Victoria (hence the eatery's name, Chez Wong), he doesn't have a menu, and you have to call days in advance in order to get a spot. But if you want the real deal, he's your guy. And now he's going to show you how to do it yourself.

"And how would you make ceviche in the US?"
"With fish. How the fuck else?"
That was unexpected and awesome.
+sobekflakmonkey Lol he didn't actually say "how the fuck else" he said "con pescado. con que mas lo puedes hacer" which translates to "with fish. with what else could you make it?" lol but the subs are funny as fuck.
he said cuñao (cuñado) not coño...
sobekflakmonkey some ppl make it differently
if i get a dollar everytime this man gives a fuck, i'll have 0 dollars by now
I laughed way too hard at this comment
😂😂😂
in fact you owe him 6 dollars
This guy is a legend and I dont think people realize that Peruvians joke around like this. Its not rudeness, its like sass, its sort of like joking with someone to make them feel like they're part of the group. People usually only joke around like this with close friends. Even the snobbish and rich use slang like this. Its a laid back personality type social norm.
Its rudeness & gringo is a racist epithet, a derogatory term used primarily towards White Americans.
No it is not primarily used towards White Americans. It is used for all foreigners no matter what color they are, so why don't you get off your high horse and lighten the fuck up lad.
Mainstream Cat Ummm I'm not a lad lad. Look at my dang name Celtic WarriorESS, I'm a lass dude.
Celtic Warrioress idc lol
Totally agree. As a Peruvian American, I def know this type of humor. Love it.
"No te digo nada pues gringo huevon." ahahahha lmao
Dude, that shit had me dying!!!
He's savage AF! Lmao
Javier wong is rage
😂😂
If you know spanish it makes this 100 times more funnier lol
If you knew English, you would know you don't say "more funnier"
I bet her English is better than your Spanish. It’s not simple to be multilingual.
I'm so jealous now!
Lol I know right
@@GianlucaGallo stfu you jealous, basic ass troll
Give this guy his own show! But no different recipes. Just come by once a week and ask him over and over again how to make ceviche and what the secret is. Now that I would watch.
LOL!
hahahhahaahaha
😂😂😂
Guys like that are a dime a dozen in Lima. It’s part of the culture.
Something tells me you couldn’t follow this guy around with a camera for very long without getting cursed out lol
"If gringo's can't make this they're just dumb."
LOL, love this guy.
Translated he says, Fucking stupid (lol)
"Donkey"
BURROS
That shits racist
@@wesleybranch5117 . That’s not how racism works. If he said that he is better than whites because he is Hispanic that would be racist. Like saying “black people love fried chicken”, it’s an over generalization but not racist. And he’s kinda right , if you can’t make this you are. (Proper translation) “fucking stupid”
This guy is a fucking legend.
but short in manners.
If you think he is short in manners your shouldn’t ever go to Argentina or Spain. They will use 10 times more bad words
Give this guy a show. He was hilarious.
John Flemister ii
hes like the peruvian gordon ramsay.
Fuck off in spanish
Next this old man will give us his recipe on how to make scramble eggs
Juan Nieves It's true. I had to film a video for my friend so she can stop burning hers lol (scrambled eggs mean different things in different countries)
Juan Nieves are you some sort of cook or something
Just kidding I was hoping you'd say yes, I actually work as a cook
"you use fish and salt, that's it." seconds later "Fish ,salt and pepper-that's it." a few moments later"You use fish, salt, pepper, onions and lime-That's it!" That guy is a trip.
gotta keep you on your toes!
gotta keep you on your toes!
gotta keep adding to the ceviche to cofuse the mussles, right babe?
he said 5 ingredients. pay attention
final plate actually had octopus in it too LMAO!
This guy is a fucking champion.
He's not being a dick, it's a Peruvian slang way of talking. Lost in translation.
I speak on spanish and I found it somewhat rude but... is cultural I have peruvian friends and they behave that way when they are friends and are very polite when not hahahaha
@@johnnyesleo exactly, he is being friendly. That's how we show it :)
@@johnnyesleo exactly. In Perú you are only polite with people you don't trust.
Thabks for bringing this up. As a spanish speaker i was a bit on edge with Wong. Like "why the fuck did you agree to doing an interview if you were gonna treat the host that way?" That being said, my friends & i have a similar practice, but it's not as aggressive.
@@johnnyesleo true
Firstly, his ceviche is world renowned so he has more-than-earned his sass. Secondly, anyone who doesn't "get" his humor, probably doesn't "get" a LOT of things. So be it. (By the way, the subtitles can't fully capture the sharpness lost in translation from his actual words, which are sassier still.) Third, the producers obviously enjoyed his responses. That's obviously why they left them in the final cut. Frankly, I thought this episode was perfect in every way. Thank you, Munchies! Great job.
This isn’t the real ceviche recipe. There’s a sauce that goes all over the ceviche that isn’t shown in the video. Look at ceviche dishes pics or videos served at restaurants and you’ll see there’s actual liquid at the bottom of the plate in all of them, that’s the real secret, this video is just a crappy attempt from Vice to show “authentic” recipes when all we’re shown is an incomplete video. This is trash. Look up how to make that liquid sauce and THAT is where the world renown flavor of Peruvian ceviche comes from
@@juniperbarry9105 yes its lime juice sir, with a secret
@@juniperbarry9105 I am peruvian and the juice is called "Leche de Tigre", which is basically lime juice, salt and leftovers from fish, nothing else. If you see another color, like red or yellow, thats a variant called "Tiradito" or simply its a different ceviche not from Peru.
I would like to see him argue with Gordon Ramsey
qzniel Michelin stars are overrated..... I wouldn’t trust a tire company to know about food .
What you are? An idiot ceviche
@qzniel oooohhhh michelin stars oooiihhhh hahahaha ooooohh aaahhhhh 👏👏👏💩
He wouldn't argue with him, there's been multiple instances where Ramsey has met asshole talented cooks and he treats them with respect. If you know what you're doing, Ramsey will shut up and see what he can learn from you.
Hard to compare, since this man specializes in just ceviche, while Gordon specializes in a bunch different foods from around the world
bruh at first i thought this dude was straight Japanese i was thrown off so hard
+Angel Castillo Peru has a large Japanese population because they went over there looking for gold in the 1800s
+Angel Castillo He's from Chinese ascendance, you can tell by his last name, "Wang"
+Kira Simone, cool info! Thanks!
Go read some history books dumbass :D
Dat chinese last name but spanish language like wut
I really like this guy. no stupid answers, no bullshit, no fucks given. how do you make civeche? with fish stupid.
Most of the chefs have that sense of humor(this is what I like to call it).
i am so touched, finally no hippie shits
That's a hippie thing to say xD
"I am soo touched..." that sounds like a hippie shit to say bro.

You guys...this is Peruvian sarcasm at its finest, sheesh.
silencio!
@bertman1001 Oof. It's so easy to hide douchebaggery behind sarcasm.
bertman1001 I’m Mexican and I was laughing the whole time
@@BeanAlex Nicaragüense here, me cagué con este viejito! Funny as hell, thanks for the clarification, I thought he was rude but after reading the comments it makes more sense!! Saludos pues 👋
@bertman1001 No no, it is arrogant, but not in a mean way. Peruvian people normally bust each others balls like he did, but it is definitely arrogance, you just need to take it the right way because he doesn't mean it with malice.
Chef Wong is a LEGITIMATE TASTE EXPERT. He got the best taste of Peruvian food under his sleeves.
I love this guy's personality!
Me too
he is fantastic
how can you love this arrogant senile fuck lol? any mamacita can cook a ceviche heck even better than this. this is why i stopped training to be a chef because of angry people like him. while u comfortly eat that food in our restaurants, us chefs have slaved our asses to make that food for you
Idrankyourcoffeewhileyouwerereadingmyusername hes actually a very respectable man, who finds the great inspiration for cooking in his family. He also said a great quote "cooking is like writing a poem. you can write a poem and with the same letters you can write a different one. "
you know you think he only makes ceviche. but youre dead wrong. have you even looked into peruvian cooking? have seen the top chefs of peru? nah you just saw this video and got a little booty tickled. why you getting booty tickled man?
I like this guy. He seems more 'cheeky' than disrespectful. Also like the 'keep it simple' approach to this recipe!
Exactly. The subtitles are misinterpreted. He's not disrespectful, he's charismatic.
“Pero no te lo voy a decir, las huevas” lmao
I want to watch a whole cooking series with this guy as the host. He's f-ng GREAT!!
This guy understands life
THIS FUCKING GUY LMAOO
You truly appreciate this mans humor and sarcasm if you understand spanish lol
Saludos.
This guy is master of his art. Not giving away the secrets of his art, to those he thinks that are unworthy of it.
there is nothing expectacular...i am from Lima and i ate there...he is very popular in Lima because he is friend of Gaston Acurio the most popular chef in latin america..thats it.
he's a very sassy chef
If he is Wong, I don't want to be right! This is probably the most entertaining cooking video I've ever watched. If I EVER have a chance to go to Peru, I will find his restaurant, just to shake his hand! Excellent!!
GODSPEED make reservations months in advance or you won’t be able to get a table.
_accepts interview to explain recipe_
"What? You want me to explain the recipe? Idiot."
Change "idiot" for smartass. The translation is wrong.
When he said "Tu eres pregunton y espeso" it means "You are nosy (asking to many question) and Annoying"
Old dudes always have the best personality.
its called a sense of humor and i can see some of the especially sensitive viewers lack it..
Ikr this dudes so funny😂😂
White ppl
Xavier Ortiz tasteless white people
I'm white, i thought he was a riot. makes me want to go to peru and eat his ceviche
^^^ tasteless big red dogs
Munchies I have a question for you: Who translate the video ? .Obviously 100 % it was not done by a Peruvian. Just an example, in Peru "pendejo" is more like calling somebody smartass. I know for fact that in Mexico, "pendejo" means idiot. See, totally different. Also for: How could you make a ceviche in the USA? the right translation to the answer would be: With fish, with what else you can make it. Even between Spanish speaking countries, the slangs are different in each one. A proper translator is really important.
thanks for pointing that out.
shitty translation job, and i`m not even hat familiar with the Spanish language.
bien dicho pendejo
jajajajaja
Totally agree with you bro!
Only in Peru "pendejo" means smartass, kind of. To almost the rest of South America it means to be a dork as you said.
A shitty translation like this one definitely changes the real meaning of what he tried to express.
We Peruvians are the best haha
Cheers
Pendejo means kid in southern southamerica, actually. kid or smartass
give this guy his own show!
For me the best Chef for ceviche I tasted his ceviche is just incredible!
Lmao this viejito has no chill
Ceviche is way more than a recipe, "it's a way of life."
And it is very peruvian, its origin is in Peru.

Man!! I thought I would get the perfect recipe haha. I love you Mr. Wong!!
how come there are so many overly sensitive people (below in the comment box) watching a ceviche video? lol chill out guys and enjoy the video.. such insecurity!!
This guy reminds me of my uncles who are also Asian/Latinos they are all this savage 😂 I love it
The correct term its Hispanic Americans, not “latino” we not speak latin, we Speak Spanish
@@VidelaArg I can use whatever term I want.
@@KemberlyyC okay, gringo yankee
Absolutely phenomenal! A how to cooking video that doesn't tell you how to cook. Awesome!
This is the best ceviche recipe, explained with the greatest attitude. By the way, it works for all types of ceviche, fish, shrimp, beef, even vegetarian (mushrooms! (;{)), just adjust the acidity as needed.
I'm a professional Peruvian Cuisine Chef and if you wanna try the best ceviche recipe follow this steps: cut into small pieces Tilapia Fish, add some red onions, coreander, salt, ajinomoto, 4 green lemons and 2 tea spoon of tabasco to give an extra spicyness. Enjoy your Ceviche :)
Tilapia bland as fuck homie
DJFaNaTiiC well, there's other ingredients involved. now it wouldn't taste as bland eh?
kalamay you'd actually listen to someone who's a self proclaimed professional? Smh
tilapia sucks! Ceviche=ultra fresh fish!
ajinomoto is pure MSG. As a professional chef, why would you put MSG in anything?
aaaahahahahaaa I swear I died when he told him "with fish - how the fuck else" :'D 😂
I’m dead 🤣🤣😂😂😂 This guys the funniest Chef I’ve ever heard.
hahaha this guy is a real chef. A chef always has its secrets its their way of life he cannot just tell you out of the blue.
i love this guy
This guy is hilarious i think you have to understand spanish to really see that hes not at all trying to be rude thats just the way people speak , well at least all the old spanish speaking people i know
PTM....
This is the funniest interview they have ever done!!!! Lmfao!!!!
as a peruvian, i could not stop laughing from this man."gringo huevon" lmao
I swear, this was funnier than most stand up routines that YT has recommend. 😂🤣😂 Pinche señor Wong, se pasa el gueee.
this guy is great and i might actually try this because its so simple
This is what happens when you send a noob reporter to ask candid and obvious questions to a regular guy with amazing cooking skills and zero fucks to give. Oh and I think he isn't fond of gringos lol
Zero fucks to give...truer words have never been spoken. But he's just fooling around with the cam guy!

I love his honesty 😂😂 it’s so real
Old man is awesome
i love this guy! he fought the "gringo" (Chef Javier's words, not mine) to the end in not giving away his recipe secrets. good for you lol. i agree that the best ceviche is in it's simplicity. my favorites are peruvian and ecuadorian ceviche. love love love octopus/fish/shrimp ceviche! the simple version chef Javier Wong makes in this video looks out of this world! nam nam nam
He's so full of himself and his country it's kind of awesome
Damn munchies, how'd I sleep on THIS video for years?

I'm Peruvian, and I've seen this guy on my town, he's fuckin' awesome
Chinese Wong in Peru calling a Spanish speaker gringo , muy bien^^
Peru had the second largest Chinese immigration in America, that's why Javier and I have the last name wong, but we are as peruvian as el pisco y el ceviche.
I love this guy!!
Took his instructions and made a quick dish out of it. Tastes great!
