Amazing how technique makes such a difference. I had to substitute a couple of ingredients but it was the technique that made the difference.

Soooo good! I made it like I learned from my Mom and of course it tasted good, but you’re right…it was soggy squash. Likely that is why we put eggs in it. I will always make it in the future by roasting the squash. It is so delicious. Thank you for teaching us how to make it better!

Good thing I'm going grocery shopping in a bit so that I can buy some squash. Amiga this truly is the perfect side dish to just about any meal as you said in your video and I also love this is a year round casserole. I have never liked yellow squash because of the mushy texture. Going to give this a try this summer.
