It's fantastic with asparagus. As for snap peas, the flavors work well, but snap peas have a very slick surface and the sesame doesn't stick very well to it. One way to get around this is to add a little liquid to the sesame mixture(like dashi or water) to make it less crumbly which will help it adhere to the surface of the pods.

I love the way you treat the spinach! It's not my favorite, but I would bet I'd like this. Hadn't tried this yet, but I will try it with Swiss chard. My neighbor keeps giving me beautiful bunches of it. Beautiful presentation with the roots as a garnish!
Swisschard is fantastic as goma-ae. We used to grow it at my parents house and it was a common side dish in our household growing up. Goma-ae also works with other veggies, like green beans, kale, etc.

Most of my audience is based in the US, so I try and make my recipes using ingredients that are available there, but unfortunately they may not all be available in India. I generally include suggestions for substitutions where possible in the headnotes of the full written recipe on my website (link is in the description). Hi Mara, this works with many vegetables, including bok choy, Swiss chard, broccoli, cauliflower, green beans, carrots, etc. In terms of the ratio of the sesame seed mixture to vegetable it's going to depend on the vegetable you use. Spinach is not very dense, so you could probably get away with using this amount of seasoning for a lot more bok choy (maybe 300 grams or so), but there's a fair amount of flexibility here, so maybe make a little extra and then adjust it to taste. You can keep the sesame mixture in the fridge for a few days. As for the cooking time for bok choy it depends on how thick the leaves are and how crisp you like it. I like my bok choy very crispy so I usually only cook it for about a minute (same as spinach).
