Olive Bread Recipe | No-Knead Mediterranean Olive Bread

  • The Easiest recipe, no kneading Olive Bread.
    Crusty bread, soft and flavorful inside! No-Knead Mediterranean Olive Bread
    INGREDIENTS
    500 grams sifted wheat flour
    Salt 1 teaspoon
    Sugar 1 teaspoon
    Yeast 1/4 teaspoon
    Chili flakes 1-1,5 teaspoon
    Dry thyme 1 teaspoon
    180 grams pitted olives (90 green, 90 black)
    Warm water 360 ml
    Roofing overnight (8-12 hours)
    I use Aluminium non-stick baking casserole pan.
    Bake 200°C (392°F) 30 minutes in a saucepan with lid and 25-30 minutes without the lid.

    Very basic and have done this many times. During the course of learning, I added the pull & fold like an envelope of the dough, about 3 times every 15 minutes before I let the dough rest for the night. Process seems to add more crumbs or air inside and I wouldn’t cover it after baking because I want the crust to be crunchy. Otherwise this is a great video to follow for any new artisan bread baker. Thanks for sharing!

    I make this and other versions of no knead breads. Normally you would do a few fold overs and proof the bread after shaping, but it still seemed to work. Nice video! Regards from NJ, USA

      @@_home_cooking thank you for the info !! i think i will stick to all purpose flour because recently i tested a recipe with whole wheat flour and the bread was so dense, almost undercooked. I will try this recipe soon 🙂

      Can confirm, this does not work with whole wheat flour…I was wondering why mine didn’t turn out and I just learned that wheat flour does not mean whole wheat flour 😢

      Since flour can be affected by many things, such as room humidity, weighing ingredients will ensure no unpleasant surprises. Once I switched, my results were always the same. Not so with cup measurements. If you use the dip and scoop method, a cup of flour may have more flour than if you spoon and fill the cup. Weight measurements are always consistent.

    My bread turned out superb and we loved it
    But next day the crust was soft and not crusty
    Please let me know what should be done to keep it crispy

      Try storing bread in a paper bag, it may help.

      I make with wheat flour (sifted once), but you can use all purpose flour because it’s made for all types of baked goods 👍

    Whole wheat flour has a brown appearance, do you mean "White whole wheat" flour? which is hard white spring wheat

      It is wheat flour sifted, you can use bread flour or all purpose flour.

      @@_home_cooking i got white wheat flour. Gonna make it tomorrow. Im thinking of proofing it for 24hrs. Will proofing make a difference?

      Not at all, the bread turns out quite big so the chili flakes give a little piquant flavor

      @@SailingNose I used wholemeal flour to make it healthier. That's the only thing I did differently.

      @@yousymik That's most likely why. Gluten is what gives bread its elasticity and wholemeal flour has much less of it than white flour.
